Jalapeno And Sweet Corn Hummus

Hummus.  It’s just about the best “dip” out there.  It’s one of my favorite appetizers to serve at a dinner party for a couple of reasons.  First, it’s tasty (duh, it’s hummus).  Second, I make it the day before and it’s one less thing I have to think about as I’m running around the day of the party.  While my husband and I still find the Easy Hummus to be the best one going so far, I’m always looking for ways to switch it up.

This hummus takes a traditional hummus recipe and turns it into a sweet and spicy one.

Jalapeno And Sweet Corn Hummus Recipe
(Makes about 2 to 3 cups)

Ingredients:

  • 4 medium jalapeno peppers
  • 2 (16 ounce) cans of garbanzo beans (aka chick peas), drained and rinsed
  • 1 (15.25 ounce) can of sweet corn, drained and rinsed
  • 6 tablespoons olive oil
  • 1 and 1/4 teaspoons salt
  • 3/4 teaspoons ground pepper

Directions:

  1. Heat your oven on the broil setting, no need to wait for any preheating on this setting.
  2. Line a baking sheet with tin foil and place the jalapeno peppers on the baking sheet.  Broil them on the highest rack, until the skin blisters and chars.  Turn each pepper until all sides have been roasted.  (A few minutes at a time between turning them.)  Let them cool until you can handle them and remove the skin and seeds.  If you roasted them properly, the removal of the skin should be super easy.
  3. Roughly chop the jalapeno peppers.
  4. Combine all the ingredients in a food processor and process for about 4 minutes or until smooth.

Store in an air tight container in the refrigerator.

It is almost impossible to capture something that looks like yellow wall paper paste and make it look delicious.  I tried different props, but no matter what I used it was all the same outcome…it looks way more appetizing in person.  You’ll have to kinda trust me on this one and know that when I tell you that this tastes delicious, I really mean it.  Everyone in my family says so too.     😉

This hummus is spicy!  I love that the sweetness from the corn helps to balance out the heat.

Almost any food there is works as a great conduit for hummus.  Potato chips, tortilla chips, veggies, pita (either in chip form or otherwise), or as a spread on a sandwich, toast, or as my husband would say, a tennis shoe…  All these things and anything else you can think of will likely work perfectly.  Today I spread it on a piece of bread.  Yuuuum.     🙂

For some reason I associate something spicy as being manly.  I know that’s a horrible stereotype and it’s totally not true, but wouldn’t this make for some good eats at a super bowl party?!     😉
