Blackberry Coconut Smoothie

I’m obsessed with making smoothies.  I’m actually starting to wear out my blender so I’ve been researching its replacement.  Does anyone have any recommendations?

The more that I make smoothies the more that I realize I’m very picky with them.  I don’t like it so thick that I can’t suck it through a straw, but I also don’t like it when it’s too thin so I feel like I’m just drinking flavored milk.  I also don’t like to use ingredients that can turn into mush, like graham crackers or cookies, or ingredients that don’t break down easily like certain berry seeds or pomegranate pips.  (I have texture issues.  Please don’t judge me.     😉 )   Plus, I’m finicky about the combination of flavors.  My taste buds can’t seem to comprehend a bitter vegetable and sweet fruit in one sip (maybe I just haven’t found the right combo yet).  Needless to say it’s quite an achievement when I find a smoothie recipe that I really enjoy.  This light and healthy berry smoothie made the cut and I’m excited to share it with you!

02Blackberry Coconut Smoothie

Blackberry Coconut Smoothie Recipe
(1 Serving)

Ingredients:

  • 1/2 cup vanilla Greek yogurt
  • 1 cup ice
  • 2 tablespoons shredded coconut
  • 1/4 cup fresh blackberries
  • 1/2 frozen banana

Directions:

  1. In a blender, add all of the ingredients and blend them until they are smooth.
  2. If you want it to look like a bull’s eye from the top of the cup, you just need to add the ingredients in a specific order.  First, blend 1/4 cup of the vanilla Greek yogurt, ice and the shredded coconut and pour them into a glass.  Rinse out the blender.  Next, blend the remaining 1/4 cup of vanilla Greek yogurt, blackberries, and frozen banana.  Finally, pour the blackberry layer gently into the glass.

 

How pretty is this drink?  I love the illusion of two different smoothies in one glass.     🙂

The blackberries are the shining flavor here.  You can switch it up and use almost any berry you like or have sitting around.  Each berry option really makes an entirely different smoothie.  It’s almost like you’re getting an infinite number of recipes today!  I’ve been using vanilla flavored Greek yogurt (as opposed to plain) in my smoothies lately because I think it adds great flavor.

The shredded coconut is awesome!  It’s a lovely compliment to most berry flavors and it adds a little sweetness.

The berry mixture is super thick and luscious thanks to the frozen banana.  Since it’s only half of a banana, you barely even taste it.  The coconut mixture is like a sweet icy milk.  When you swirl everything together you have the perfect textured smoothie!  (This is the alternative to the “bull’s eye approach.)

  3. Ok, so I just got a NutriBullet and I am OBSESSED! They had a set at Costco that came with a bunch of different cups and accessories and was only $90. It’s perfect for smoothies, barely takes up any room on the counter, and clean up is a breeze! I cannot recommend it enough. And I will soon be making this smoothie in it because I am now uber obsessed with making smoothies for breakfast : )

      I’v heard of that one. My husband wants to buy a Vitamix, but I’m not convinced that we have to spend that much money to get a good blender. I hope you love this smoothie as much as I do. 🙂

  7. I love this! Blackberries are usually too seedy for me, but this looks so good. I am a smoothie fanatic, too, and make single serve batches 2-3 times a day in my Ninja (I have the small one) I have to get my chocolate fix, so chocolate banana is my favorite, but blueberry banana is an awfully close second. 🙂

  10. I have the same texture issues as you do when making a smoothie. Love the bright purple colors and because I cannot consume milk products coconut is always a good option for me. Looks very tropical. Pinning this one!

  13. Oh man, I love blackberries! I planted 4 blackberry bushes in my backyard several years ago, and I finally got a decent amount of berries off of them last year. Totally saving this recipe for next year’s harvest! Oh, and I have a Breville blender. It’s amazing! Definitely not the cheapest blender out there, but it performs quite well. Two thumbs up from me.

  19. The girl upstairs (I live in an apartment!) has been putting on her blender lately, I assume to make a smoothie, every morning and I can hear it. Ever since she’s been doing that it’s been making me want a smoothie for brekky, too! I’ve never really been drawn to them before but the times I have had them I’ve loved it … especially red berry ones. This one with the Greek yoghurt (erm … plenty of that over here in Greece!!) and coconut and berries sounds fabulous so maybe I should give it a go and have a blender noise competition with the girl upstairs … haha!

  25. Oh this looks so delicious and refreshing! My blender is just managing to get by so I don’t have much insight to offer (…though I’m appreciating reading through the comments!). This smoothie sounds like the texture I’d enjoy, as well. I’m not a fan of anything too smooth – it’ll be gone before I even back out of the driveway en route to work!

    Hi Tina…I love your website, it’s so pretty. This drink sounds amazing. I think I will add it to my fruit drinks for the week. I may use Almond milk instead of the yogurt, actually, I will try it both ways.
    As far as a blender to use…I love my Nutribullet. Do you have one?

      Thank you kindly! Right now I have a kitchenaide or cuisinart (I can’t remember) but it badly needs to be replaced! I’ll take a look at the nutribullet too…I’ve heard of it. Everyone’s recommendations have been so helpful. Buying a blender should not be this hard!
