One Pot Black Beans And Sausage

We’ve had cool temperatures this past week, especially for the middle of August here in Connecticut.  That’s especially good since this week our air conditioner died.  All this cool weather with open windows at night and fans all over the house got me thinking of my favorite time of the year.  Autumn.  I love the weather and the food that we notoriously eat that time of year, like apple pie and all the things you can make with pumpkin.  I even made some pumpkin bread this past weekend (coming soon to a blog near you).  Some might say that means that I’m a well prepared food blogger, getting ready for pumpkin baking season.  I’ll take it, but actually I was just in the mood for something pumpkin-y.     🙂

I was also in the mood for some warm comfort food and this black beans and sausage dish fits the bill.

One Pot Black Beans And Sausage Recipe
(About 4 servings)

Ingredients:

  • 2 teaspoons olive oil
  • 1 pound hot Italian Sausage, cut into 1 inch slices
  • 3 medium carrots, diced small
  • 2 shallots, diced small
  • 1/8 teaspoon salt
  • 1/8 teaspoon black pepper
  • 2 garlic cloves, minced
  • 2 cans (15.5 ounces each) black beans, drained and rinsed
  • 2 cups low sodium chicken broth
  • chopped fresh parsley, sprinkling on top (optional)

Directions:

  1. In a large skillet, heat the oil over Medium heat.
  2. Add the sausage and cook until browned.
  3. Transfer the cooked sausage to a plate.
  4. Add the diced carrots and shallots into the skillet and season them with salt and pepper.  Cook until they begin to soften.  (About 4 minutes.)
  5. Add the minced garlic and cook for about 1 minute.
  6. Add the black beans and broth and stir all of the ingredients together.
  7. Bring the mixture to a boil.
  8. Add the cooked sausage back into the skillet.
  9. Reduce the heat to Simmer/Low and cook until the carrots are tender.  (About 12 minutes.)
  10. Optionally sprinkle the chopped fresh parsley on top before serving.

Have you ever cooked an entire dinner in one pot (that wasn’t a slow cooker)?  I have recently been turned on to this phenomenon and I’m seriously loving it.  What’s not to love?  I have one pot to wash (and a cutting board and few measuring spoons) and my kitchen doesn’t look like a tornado hit it.

They key to this meal is the sausage.  You can really use whatever kind you like, even turkey sausage will work if you want to make it a low fat wonder.  However, please make sure it’s good quality and good tasting sausage because it’s where most of your flavor comes from in this meal.

Spicy sausage and black beans are an awesome combo.  The carrots add lovely color and…well, add veggies to make the meal complete.     🙂

This meal was perfect to eat this past week and I can see myself making it again in the middle of winter.  I’ll cozy up to the fireplace under a warm blanket with a big bowl of this hearty meal.

I’ve noticed on Instagram that a few of my food blogging friends busted out the cans of good old pumpkin puree so it seems as if I’m not the only one who’s got Fall on the brain.  However, you don’t have to be a food blogger to be in planning mode.  Maybe you simply look forward to Fall time food.  Are you planning your Fall or Winter meals yet?  (Don’t hate me for asking these question in the middle of August!)

  2. One pot meals are the besttt! This meal would be a huge hit in my house, Tina! And I haven’t yet cracked open a can of pumpkin puree, though I did buy a few this past week. It’s still 90+ and humid here in Nashville so fall hasn’t really been on my mind. Soon though I hope! I think it’s my favorite season. Enjoy your weekend!!

  7. Loving one pot meals and this one looks so very comforting. I bet you could swap out sweet potato or pumpkin for the carrots too if you are having that wish it was fall craving.
