Pizza.  Isn’t it the best food to eat while you’re watching football?  It sure is.

Who am I kidding?  Pizza is perfect 365 days a year, no matter the occasion.  Football is just a good excuse.

It’s sort of a tradition for my husband and I to eat pizza while we watch the Patriots play, even if it’s a frozen pizza from the store.  Yes, sometimes I’m lazy.  😉  The last time we made pizza, we went all out with pepperoni, which is my husband’s favorite.  This time we’re going  vegetarian, which is more my thing.

Can you tell that the pizza crust is light golden brown?  That’s because we made a whole wheat crust (and by “we” I mean my husband).  We debated how much of the recipe should actually be made with whole wheat flour.  We found some recipes that used 100% whole wheat flour, which seemed a little too earthy crunchy for our taste buds.  Since we loved the basic pizza dough recipe from the 500 Pizzas & Flatbreads cookbook, we decided to try the whole wheat pizza dough recipe from the same cookbook but with a few Dave’s Bread Corner modifications so it’s easier to make.

This crust has a bit of texture from the whole wheat flour, but the bread flour and all-purpose flour keep it from taking over the world.  We have to admit that we still prefer the basic pizza dough recipe but this whole wheat crust is an awesome one if you’re looking for something with more whole grain in it.

It only makes sense to top this whole wheat crust with something equally healthy.  Here enters the veggies.  It’s basically a supreme pizza, minus the meat.  In fact since this is technically a Dave’s Bread Corner post, my husband wanted me to call this recipe “Vegetarian Supreme Pizza” but I figured that would be too confusing so I overruled him.  Oh, plus I added zucchini to my personal pizza… because I wanted to.  My husband skipped the zucchini but that’s the great thing about making your own pizza at home…  Use the veggies YOU like.  🙂

Veggie Pizza Recipe
(Makes 2 personal sized pizzas)

Ingredients

  • 1 batch of Whole Wheat Pizza Dough
  • an assortment of vegetables (I used red bell peppers, green bell peppers, onions, mushrooms, and zucchini), chopped
  • 1 cup marinara sauce (homemade or from the jar.  Today I used Bertolli sauce.)
  • 8 ounces mozzarella cheese, shredded

Directions

  1. Preheat the oven to 450 degrees F.
  2. Flatten the pizza dough balls into roughly 12 inch pizzas on a baking sheet.  (They usually end up more rectangular than circular so they fit properly on the baking sheet.)
  3. Spread the marinara sauce onto the pizzas.  (Using more or less as desired.)
  4. Top each pizza with the shredded mozzarella cheese and then the vegetables.
  5. Cook them in the preheated oven for about 18 minutes or until the cheese is fully melted and has a few darker looking spots on it.
  6. Slice and eat immediately.  (Please be careful, it will be VERY hot right out of the oven.)

  4. Homemade pizza is one of my favorites!! I would most definitely dive into a few slices of this one – it looks delicious! And with the whole wheat crust I wouldn’t even feel a pang of guilt about it. 🙂
