Yogurt, fruit, and granola… This is what my breakfasts are all about lately.

I tend to get sick of eating the same thing over and over again, but when I find something I really love, like pizza, ice cream, cookies, bagels, or a great yogurt combo, then I can eat it every day for long periods of time.  It’s probably not surprising that my “love” list involves mostly unhealthy foods.

The pre-packaged yogurt cups with fruit are the bomb digity when you’re feeling lazy and they can easily be thrown into your lunch bag for work.  If I’m feeling ambitious, I’ll make my own concoction using plain yogurt and assorted fresh fruits.  If I’m at home and I want to make it a little interesting, I’ll pull out my favorite blender and whip up a smoothie like this fun pineapple and coconut one.

This smoothie is mad easy and I wondered if I should even share it with you as an actual recipe.  Sometimes the simplest recipes are overlooked and it takes someone like me to remind you that a delicious three ingredient smoothie does exist.  Hey, I’m taking one for the team here.

This smoothie tastes like a virgin pina colada.  If I close my eyes and pretend I’m on a beach, it almost feels like I’m back in Turks & Cacos sipping the best one… minus the alcohol… and minus the cherry on top.  However, I’m also skipping all the fat and calories and right now that’s a good thing.

Lately, I’ve been adding granola to my yogurt and fruit breakfast party.  (I use the term “party” loosely since I’m not a morning person and having a party centered around yogurt would probably be kind of weird.)  I love my Homemade Granola and Almond Granola recipes, but I haven’t been in the mood to make either one of them.  Lazy much?  It happens to the best of us, especially during hibernation season.  😉

Last week my husband brought home Cascadian Farm’s Oats & Honey Granola and I’ve been obsessed with it.  I like that it’s not overly sweet, like most pre-packaged granola is.  Plus it’s organic and that’s always awesome.  I read the ingredients, they had organic things in there that I didn’t even know could be organic.

Do you love how I’ve got this colorful smoothie styling with a striped pink straw?  My breakfast is pulling out all the spring time colors.  🙂

Pineapple Coconut Smoothie Recipe
(1 serving)

Ingredients:

  • 1 cup of frozen chopped pineapple
  • 1 tablespoon shredded coconut
  • 1/2 cup plain Greek yogurt
  • (optional) 2 to 4 tablespoons of skim milk (The amount depends on how strong your blender is.)
  • (optional) sprinkling of chia seeds on top
  • (optional) sprinkling of granola on top

Directions:

  1. In a blender, combine the frozen chopped pineapple, shredded coconut, and yogurt, and blend them until they are smooth and creamy.
  2. (Optional)  If the mixture doesn’t blend well, add the milk to help it out a little.  (Note, I did not use liquid in my smoothie.)
  3. (Optional) Sprinkle some chia seeds and granola on the top. (Try to enjoy the smoothie before the granola turns to mush.)
