Pancakes

TGIF… and it’s a long weekend!  Most people are gearing up for the start of BBQ season this weekend, getting the hamburgers, hot dogs, and various BBQ fixings ready.  However, I’ve got breakfast on the brain, pancakes to be exact.

Recently I realized that a pancake recipe has not made an appearance on Tina’s Chic Corner.  What the what?  I mean, pancakes are one of my faves.

Typically my husband makes pancakes using Bisquick with the recipe on the back of the box.  While the Bisquick ones are tasty, I wasn’t going to post something that was pretty much just add milk and eggs to something from a box.  Sure, it’s convenient, but it’s not exactly blog worthy.

I relayed this conundrum to my husband.  (Yes, I’m being a bit dramatic.)  He turned to the interwebs and found this homemade pancake recipe.  Now THESE are absolutely worth sharing with you.  Mind you, I’m not doing this to simply check it off my list.  Although, I have to admit that I feel complete now that a kick butt pancake recipe has made an appearance here.  🙂

These are the fluffliest and tastiest pancakes we’ve ever made.  (And when I say “we” I really mean my husband.  😉 )  These don’t have that Bisquick “flavor” (if that makes sense), a taste that I never knew was there until I compared it to the real deal homemade version.

These are almost as easy to whip up as the box mix version.  Pour a bunch of ingredients in a bowl and stir.  It’s all the same, except here the ingredients aren’t mixed together in advance.

How cool would it be to have a pancake bar for breakfast!?!  Let everyone decide what they want in or on it.  Just saying.   The hubby and I usually eat them the good old fashioned way, with butter and maple syrup (the good stuff, not what my husband calls “plastic syrup”).  Although if you know me then you’ll know that chocolate chips are usually in order for my pancakes.  Mmm, chocolate.

I’m super excited for this long weekend.  I mentioned the other day that my best friend and her family are coming for a visit.  We haven’t seen each other since late last year so we have lots to catch up on.  Plus, my parents are coming over to help us put together shelves for my shoe closet.  Gah… a closet just for shoes… I’m beyond stoked!  I’ll definitely share pics with you.  I have some other projects planned, but let’s see what I actually get done.  After all, a long weekend calls for some rest and relaxation.  🙂

What are you up to this Memorial Day weekend?  Whipping up some kick butt pancakes, perhaps.  😉

Pancakes Recipe
(Makes about 6 or 7 pancakes)

Ingredients:

  • 1 and 3/4 cups all-purpose flour (equivalent to  7.0 ounces)
  • 3 and 1/2 teaspoons baking powder
  • 1 teaspoon salt
  • 1 tablespoon white sugar
  • 1 and 1/4 cups milk
  • 1 large egg
  • 3 tablespoons butter, melted

Directions:

  1. In a large bowl, add the flour, baking powder, salt and sugar.  Whisk to combine.
  2. Add the milk, egg, and melted butter.  Whisk until smooth.
  3. Before each pancake add a small amount of butter to the skillet.
  4. Scoop roughly 1/3 cup of batter into a medium skillet over Medium heat.
  5. Flip when some of the bubbles that form during cooking stay visible and the edges look a little dry.
  6. Cook the other side until lifting the edge reveals a light golden brown color.

    These look amazing. I’ll give this recipe a try, since my husband doesn’t care for the box mix. A pancake bar does sound amazing.
