Football season is starting soon and I’m excited to have some football food.

You know about “football food,” right?  It’s beer, pizza, nachos, dips, chips, and other delicious fattening foods that one typically eats at a game party.  Even if you don’t like sports you’d probably still be willing to go to the party to enjoy the food.  It’s that good.  My contribution to the next game party would be this amazing bean salad.

Side bar for a moment…  Can we marvel at my culinary cutting skills for a moment?  It took me FOREVER to cut them all just right.  Okay, maybe not literally forever (my husband points out that it is definitely not literally forever), but it was longer than I care to admit.  I was just going for perfect photo quality for you guys.  In reality, your goal is to cut the veggies into very small pieces.  I’m pretty sure when I make this for our next party I won’t be so meticulous about all of the veggies being the same size.  Who am I kidding?  I’m not sure the perfectionist in me would let me get away with that.  😉

Most of us live for those chip and dip deals at parties.  They’re easy to buy or whip up and they’re usually a crowd pleaser.  Cowboy caviar, anyone?  I didn’t come up with that name and apparently that’s what this bowl of beans and veggies is called.  Do cowboys not like genuine caviar?  Do they consider bean and small cut veggies as caviar?  Are hacked up veggies and beans as close as most cowboys are willing to get to caviar?  I’m so confused.  If I created this recipe I would have simply called it “Tasty Bean Salad That Can Be Scooped Up With Chips” (or something) because that’s exactly what it is.

Guys, this stuff is ca-razy delicious.  Maybe it’s awesome because of the combo of beans and veggies.  Perhaps it’s outsanding because of the dressing.  All I know is that this is one of those dips that you keeping going back for more.  Before you know it, the bowl is empty and your sad that it’s all gone.  Maybe you’re also sad because you ate way too much of it.  Possibly you’re sad because you’re the one that had to perfectly cut all those tiny little vegetables.  😉

Thankfully this bean salad is actually not that bad for you, especially if you skip the chips and eat it straight from the bowl!  Seriously, it’s that tasty.

Cowboy Caviar Recipe
(Makes… a lot)

Ingredients:

  • 1 cup chopped celery
  • 1 cup chopped onion
  • 1 cup chopped green bell pepper
  • 2 tablespoons chopped jalapeno
  • 1 can (15.5 ounce can) pinto beans, drained and rinsed
  • 1 can (15.5 ounce can) black beans, drained and rinsed
  • 3/4 cup oil
  • 3/4 cup apple cider vinegar
  • 1/4 cup white sugar
  • 1/2 teaspoon salt
  • 1/2 teaspoon pepper

Directions:

  1. In a large bowl, add the chopped celery, onion, green bell pepper, jalapeno, pinto beans and black beans.  Set it aside.
  2. In a medium saucepan, over Medium heat, add the oil, apple cider vinegar, sugar, salt and pepper and bring it to a boil.
  3. Remove the liquid from the heat and pour it into the bowl of vegetables and beans.
  4. Gently mix everything together and let it cool prior to serving.
