How do you use your ripe bananas that are about to go bad?

I had some bananas to use and clearly I like to turn them into baked goodies.  Hello, sweet junkie, at your service.  When I bake with bananas I have one kind of important rule… I need to have all the ingredients on hand already.  The timing on bananas is just too sensitive to go grocery shopping before I can make something.  I need to use them the second I’ve made up mind it’s time.  If I don’t use the bananas that exact second they’ll grow legs and walk away under their own power (or something).  Please tell me that I’m not the only one who thinks that way.

Haven’t I already made banana chocolate chip cookies already?  Why yes, yes I have.  I sort of forgot about the ones that I made back in 2014.  I guess you could say I’ve gotten to the point where my recipe index is longer than my memory.  Those cookies are truly bangin’ cookies.

These banana cookies are similar to the other ones I made, but not quite.  They are both cookies made with banana, oats and chocolate chips.  Here’s the deal-e-o.  These cookies have no butter (or in the case of the ones I made a couple of years ago, no shortening), no white flour, and no spices in them.  Instead, these cookies are made with coconut oil, whole wheat flour, and less sugar.

Both kinds of cookies are equally delicious.  At the end of the day, I’d recommend that you make both kinds and do a fun side-by-side tasting, or make whichever one you already have the ingredients for, since that is definitely the rule.

Whole Wheat Banana Oatmeal Chocolate Chip Cookies Recipe
(Makes about 24 cookies)

Ingredients:

  • 1/3 cup coconut oil
  • 1 and 1/4 cups whole wheat flour (equivalent to 5.6 ounces)
  • 1/4 teaspoon salt
  • 3/4 teaspoon baking soda
  • 1/2 cup packed dark brown sugar
  • 2 teaspoons vanilla extract
  • 1 large egg
  • 2 ripe bananas, mashed
  • 1 and 1/4 cups rolled oats
  • 2/3 cup chocolate chips
  1. Preheat the oven to 375 degrees F.
  2. If your coconut oil is hardened and opaque you should melt it.
  3. In a medium bowl, whisk together the whole wheat flour, salt, and baking soda.  Set aside the dry ingredients.
  4. In a large bowl, beat together the coconut oil, brown sugar, vanilla extract, and egg until it’s well combined.
  5. Mix in the mashed banana.
  6. Mix in the dry ingredients until just combined.
  7. Gently fold in the rolled oats and chocolate chips.
  8. Using a cookie scoop, drop the dough onto a baking sheet.  I use the OXO good grips medium cookie scoop.  If you don’t have a cookie scoop then carefully spoon about 1 heaping tablespoon of cookie dough.
  9. Bake cookies in the preheated oven for 10 to 13 minutes or until edges become golden brown.
