Pork Egg Roll in a Bowl

This may not be the prettiest meal but it sure is delicious.

I’d rather be taking pictures of pretty doughnuts.  Heck, I’d rather be eating them too.   You know, because they’re doughnuts.  I’ve fallen off the wagon and I haven’t been eating healthy for the past month.  I blame my tooth, which started as a tooth ache and resulted in a root canal.  I’ve kept up with my workouts, but my pants feel more snug than usual.  I must get back on the healthy eating track and this meal is a great way to start.

This meal is quick and easy which is awesome because I’m always looking for fast meals to make on week nights.  You can even prep this on a Sunday to have for lunches during the week because it reheats well.  That reminds me, I need to get back to prepping my lunches ahead of time.  I think that will help me get back on track for eating something that’s not pizza or bagels or doughnuts.  Not that there’s anything wrong with that.  😉  My sister reminded me that bathing suit season is right around the corner so I’m using that thought for inspiration.

The one question that you may be asking is “does this really taste like an egg roll?”  I’m not sure.  I actually haven’t eaten an egg roll in two or three years.  My husband caught a bug or virus and associates it with the meal he had that night, which was Chinese food.  What I can say is that I really like this meal and I’ve added it to my rotation.  That’s all that counts in the end, right?

Pork Egg Roll in a Bowl Recipe
(4 servings)

Ingredients:

  • 2 tablespoons sesame oil
  • 3 cloves of garlic, minced
  • 1/2 cup onion, diced
  • 5 green onions, sliced, whites and greens divided per the directions
  • 1 pound ground pork
  • 1/2 teaspoon ground ginger
  • pinch of salt
  • pinch of pepper
  • 14 ounce bag of coleslaw (I used Dole.)
  • 3 tablespoons soy sauce
  • 1 tablespoon apple cider vinegar
  • sprinkling of toasted sesame seeds to top

Directions:

  1. In a large skillet, over medium heat, heat the sesame oil.
  2. Stir in the minced garlic, diced onion, and the white parts of the green onions, and cook until the onions are tender and it smells good.
  3. Stir in the ground pork, ground ginger, salt and pepper, and cook until the pork is cooked through.
  4. Stir in the coleslaw, soy sauce, and apple cider vinegar, and cook until the coleslaw is tender.
  5. When you serve, sprinkle the green parts of the sliced green onions and toasted sesame seeds on top.
