Oven BBQ Chicken

Hello, tasty food. Yes sometimes I talk to my food. 😉

I like to make a lot of homemade recipes. (Uhm, hello, food blogger.) However, I’m not compelled to make a homemade BBQ sauce when I’ve found a great brand that does all the work for me. Now if you want to make your own BBQ sauce, kudos for you and this recipe will still work for you.

BBQ sauce + chicken thighs = good eats. It’s really that simple. It’s a delicious crowd pleaser so if you’re looking for an easy dinner to pull together for some picky eaters, then this might be it. I’m not always a fan of chicken and even I love this recipe. I mean if you cover it in enough BBQ sauce then it’s bound to hide that “chicken flavor.” 😉

I happen to enjoy BBQ chicken all year long so I instantly thought of pairing this chicken with rice and vegetables. My husband said that rice is an odd side dish in the summertime. Fair enough. If you’re at a BBQ then you’re likely to have potato salad or this corn salad instead. I had some of the leftover BBQ chicken the next day for lunch in a salad with lettuce and veggies and it was delicious. The point is, you’ve got options of what to eat with this BBQ chicken, many options.

Oven BBQ Chicken Recipe
(Makes 4 servings)

Ingredients:

Directions:

  1. Preheat the oven to 400 degrees F.
  2. Line a baking sheet with tin foil and place an oven safe rack on top of the baking sheet so that it sits inside it.
  3. Brush the oil on the oven safe rack.
  4. Place the chicken thighs on the rack, with the skin side down.
  5. Bake them in the preheated oven for 25 minutes.
  6. Remove the chicken from the oven and brush the chicken thighs with BBQ sauce. Turn them over (so that the skin side is facing up) and brush the other side with BBQ sauce.
  7. Place them back in the oven and cook for 7 minutes.
  8. Remove the chicken from the oven, brush the chicken thighs with BBQ sauce, and place them back in the oven to cook for an additional 7 minutes.
  9. Remove the chicken from the oven and increase the oven temperature to 425 degrees F.
  10. Brush the chicken thighs with BBQ sauce and place them back in the oven to cook for an additional 7 minutes.
  11. If the chicken isn’t done cooking, turn the oven back down to 350 degrees F and continue until they are. This will keep the sauce from charring too badly. I needed this phase for about another 8 minutes, but the thighs in my package were HUGE. They are done cooking when they reach an internal temperature of 165 degrees F.
  12. Remove the chicken from the oven and let them rest for 10 minutes before serving.
