Cilantro Vinaigrette

This cilantro vinaigrette has been a staple salad dressing for the past couple of years. I’ve shared it with a few recipes but I thought that it deserved a spotlight of its own. It’s also handy for me to refer back to a post with just this on it when I want to make it or include it in some other post. πŸ˜‰

It was a sunny day so I took advantage of the light. I’ve been enjoying playing with the light and shadows in my photos lately. I hope you like the personality of the recent pics.

Cilantro Vinaigrette Recipe
(Makes about 1/2 cup)

Ingredients:

  • 3 tablespoons lime juice (I highly recommend fresh squeezed because it tastes better.)
  • 1 and 1/2 tablespoons honey
  • 1/4 cup fresh cilantro
  • 2 garlic cloves
  • 1/4 teaspoon salt
  • 1/4 teaspoon pepper
  • pinch of crushed red pepper flakes
  • 1/3 cup olive oil

Directions:

  1. In a food processor (or really good blender), add all of the ingredients for the cilantro vinaigrette and blend until it’s smooth.

Can I use a different herb because my husband and I don’t like cilantro?

Yes, definitely! I have used parsley or basil and love both. πŸ™‚
