Black Bean Burrito Bowl

I’m feeling lazy, very lazy.  We all have those kind of days, right?  Please don’t leave me hanging. During the winter months I have a lot of lazy days and I blame the cold weather.  I tend to think that I’ll have more motivation and energy when the warmer months come rolling around.  That’s sort of true, except I still have my lazy moments.  For example, this past week I’ve been eating cereal for dinner.  Don’t judge me.  I know there are plenty of you out there who do the same.  Show of hands?  Anyone? This meal is THE perfect thing to whip …

Summer Barley Salad

How the heck has half of the year already passed by already?! Since summer is in full swing I was inspired to use veggies that are readily available to me during this time of the year.  I cannot get enough of corn on the cob and tomatoes since this is the best time to eat them.  I think I could eat corn on the cob everyday.  Since salads are synonymous with summer, I thought I’d throw my two favorite summertime veggies into a salad.  The corn adds a little bit of crunch and a lot of flavor here. Affogato

Guys, I seriously need your undivided attention because I’ve got something here that you are going to go bonkers over. I’ve found the next best thing to a frappuccino, maybe even better.  I’m obsessed with it.  Seriously… obsessed. Is it a dessert?  Is it a drink?  …

Whole Wheat Bread

“I want a tomato sandwich,” says my husband.  We have no bread in the house, so what does he do?  My good man makes some. My husband loves a good old fashioned tomato sandwich with exactly three ingredients (tomatoes, mayo, and toasted whole wheat bread) and none of them are optional or interchangeable according to him.  This time when the need arrived we had some delicious on-the-vine tomatoes, a jar of mayonnaise, and a complete lack of whole wheat bread.  Being a guy that loves making bread, this problem merely slowed my boo down.  “I’m making bread,” says Dave.  I say, “Go for …

Lighter Roasted Red Pepper Pasta

Mondays… They’re the pits.  Will a quick and easy recipe make it easier to handle?  One can hope. I love, love, love my Roasted Red Pepper Pasta and my husband says that it’s one of the best things that I’ve ever made.  (Thanks, babe!)  I’ve made it a handful of times, but I don’t make it as often as I’d like to because it’s not exactly what you’d call healthy eats.  The sauce in the original recipe contains a half a cup of heavy cream.  It sure is tasty and if you’re not counting calories then go for it.  If you are …
