Sweet Potato Wedges and Eggs

TGIF!  What are you making for breakfast tomorrow?  What…  It’s a legit question.  I’m sure that I’m not the only one who plans ahead of time, especially when it comes to food. I was in the mood for eggs and some sort of sweet potato side dish.  I just realized that I think I start every breakfast post with “I was craving… so here it is.”  Well, my blog is a diary of my life so that’s how it goes around here.  🙂 I opted for sweet potato wedges that are seasoned with salt and pepper.  Yup, it’s nothing fancy but it sure …

Cinnamon Swirl Quick Bread

I can’t contain my excitement about this quick bread!  It’s part vanilla cake, part cinnamon bun, part crumb cake, all awesome. I’m telling you that once you make this you’ll have friends and family asking (no, begging) you to make it again.  I think the pictures say it all today, but I’m feeling a little like Guy Fieri on Diners, Drive-Ins, and Dives.  I love that show!  If you’re a fan, then you know how he goes into crazy detail when he’s sampling the food.  I get a lot of inspiration from Triple D.  The only bad part is that it never seems like …

Skillet Calzone

Pizzas are for Fridays and the weekend!  Instead, how about we switch it up a bit and have a calzone?  You know, because that’s nothing like a pizza.  😉 Whaaaat?!  Calzone in a skillet?  That was my reaction when I saw this recipe in a magazine.  Of course I needed to try it as soon as possible.  It’s basically like my Pizza Skillet, except you add a layer of pizza dough on top of the whole shebang and fill it to the brim with stuff first. I’m still intimidated… or more like I’m still afraid of working with yeast so …

Frozen Mango Margarita

I’m still celebrating Cinco de Mayo with this margarita!  (My husband is still celebrating Quatro de Mayo by pretending that the fourth Star Wars movie is almost out.) Let’s be real, I don’t need a reason to enjoy a margarita.  It’s just an ordinary Wednesday so I’m living it up with this cocktail.  If you really need an excuse, then this would be awesome for a Mother’s Day brunch this weekend. I’ve been having a blast trying a variety of flavored margaritas.  The Pineapple Margarita is my favorite so far and the Paloma (which is like a grapefruit margarita) is super delicious and refreshing.  My husband …

Chilaquiles

Chilaquiles.  Chila…  what? I try to pronounce the term correctly but I feel like I’m not saying it right.  I took Spanish language lessons in high school but perhaps I’m forgetting the basics.  After all, high school was…  let’s just say many years ago.  Then I asked my husband who proudly declares that he “took four years of Spanish and got the approximate pronunciation of ‘hola’ out of it.”  He wasn’t much help either.  Then I turned to the trusty interwebs and found an audio version to help assist me.  It turns out that I was pretty close to saying it right…  tchee/lah/KEE/lehs.  I bet that you …
