White Beans and Couscous With Fresh Tomato Salad

Have you noticed that recipe trends change when the seasons change?  I find it slightly entertaining that soups and autumnal desserts seem to be a thing of the past now, as if they’ve stopped being delicious.  Don’t worry soup lovers, the fad will return come September.  Maybe I’ll rebel and make something that no one would expect to see this time of the year, like some yummy Pumpkin Pie.  (That’s one of my husband’s favorites, so I know he would not object to that.)  I will admit that I’m sort of tired of eating soup and I’m anxious to eat some summer veggies and fruit.  …

Vegetarian Taco Salad

I eat a lot of salads, like a lot.  Basically, I eat rabbit food for lunch as a way to justify eating sweets for dessert.  I figure it’s a fair trade off.  I tend to get bored with my salads because no matter what you do to them or what you put in them they are really just a salad.  Meanwhile I could have the exact same ice cream with the exact same toppings everyday for weeks straight and for some reason that never gets old.  I love food so I want to try to keep every meal as exciting …

Pear Bavarian Torte

When I host dinner parties, I love to serve desserts that impress my guests.  You know, the ones that get all the “oohs and aahs” when you present them.  Then the moment of awe is followed up with silence because everyone has their mouths full.   This torte meets both criteria perfectly by being both beautiful and delicious. The pasta is coated with an Italian puttanesca sauce, a light tomato based sauce full of fresh tomatoes, olive oil, garlic, olives, and capers. Pasta Puttanesca …

Spaghetti Squash With Mushrooms

I don’t like grocery shopping, like at all.  People seem to lollygag while I’m on a mission.  Road rage in the grocery store aisles?  Maybe.  Plus, it never fails that I always have at least one ingredient on my list that I can’t find or the store randomly decides to not stock. After a long week last week, I avoided the dreaded grocery store . While I was happy to skip it, I quickly regretted it as soon as I tried to make dinner.  Cereal for dinner it is.  Don’t judge me.     😉  Cereal wasn’t going to cut it …
