Pumpkin Doughnut Holes

I love doughnuts and pumpkin flavor so these pumpkin doughnut holes are a match made in heaven.  I’ve made Mini Powdered Sugar Doughnut Muffins and German Chocolate Cake Doughnuts.  Both were based on recipes from Sally at Sally’s Baking Addiction.  (She has a bazillion awesome recipes so you have to go check her out if you haven’t already.)  These pumpkin doughnut holes are also a variation from Sally.  She’s officially my “doughnut baking guru.”     🙂  Thank you so much, Sally! These doughnut holes are full of great pumpkin spice flavor and covered with cinnamon powdered sugar. Pumpkin Doughnut Holes Recipe (Makes 34 doughnut …

Baked Chili

My husband and I are big fans of chili, especially The Perfect Chili recipe.  I could be partial since it’s a recipe that we created.     😉  That recipe makes a huge batch so it’s an awesome make-ahead meal that reheats wonderfully right out of the freezer.  Besides the obvious bowlful of chili, you can eat it in so many different ways, like on top of a hot dog or a baked potato or stirred into mac n’ cheese.  Which got me thinking…  what’s another way to enjoy chili? Roasted Red Pepper Soup

If you follow my blog then you know that my husband and I recently had a mini vacation in Quebec City, Quebec.  We ate at our hotel restaurant a few times because they have fabulous food.  One of the most memorable items from their menu was what they called a red pepper soup.  (The name was a bit lost in the translation, but we’re pretty sure that’s what they said.)  It was amazing!  We ordered it two nights in a row and we took turns eating it in hopes that we could pick out the ingredients and make it at home.  Two people …

This five layer coffee cake is a combination of a pumpkin pie and coffee cake.  This moist vanilla cake has a layer of pumpkin custard and a swirl of cinnamon oat streusel in the middle and on the top. Pumpkin Coffee Cake Recipe (Makes 16 servings) Ingredients for Streusel: 1/3 cup butter, melted 1 cup all-purpose flour 1 cup rolled oats …

Chicken Enchiladas

I don’t know about you, but I’m always looking for new dinner recipes.  My friend Julie, from This Gal Cooks, recently made some amazing Green Sauce Chicken Enchiladas.  You’ve got to check it out if you haven’t already.  In fact, she has a ton of delicious recipe ideas so I bet you end up pinning (or marking) a whole bunch of recipes. I had every intention of making Julie’s enchilada recipe, but I couldn’t find green sauce in my grocery store.  I’m sure it was there and I simply missed it or was in the wrong aisle (I hate it when that happens).  …
