Crispy Baked Chicken Fingers

Finger foods are awesome, especially chicken fingers.  They are great for everything from a game party to a wedding reception.  You can eat them for dinner, you can eat them enjoying the big game, or you can watch them disappear into even the pickiest kids.  Chicken fingers rule! My thing is that I don’t want to eat fried chicken fingers.  Well, at least not this time.  So how can I bake them and they still taste as great as the fried kind?  Meet these tasty baked chicken fingers.  They are moist on the inside and mad crispy on the outside. Jalapeno And Sweet Corn Hummus

Hummus.  It’s just about the best “dip” out there.  It’s one of my favorite appetizers to serve at a dinner party for a couple of reasons.  First, it’s tasty (duh, it’s hummus).  Second, I make it the day before and it’s one less thing I have to think about as I’m running around the day of the party.  While my husband and I still find the Easy Hummus to be the best one going so far, I’m always looking for ways to switch it up. Black Bean Spread

My husband and I love hummus, especially my Easy Hummus recipe.  We love black beans at least as much as we love chick peas.  This got the gears turning…  “I wonder if we can make hummus using black beans?”  Well, we love Mexican food too (which of course regularly features black beans) and decided that would be a great place to start for the seasonings.  By the time we were done, we had created a Mexican inspired black bean based “hummus.”  I must give joint credit to my husband for helping me create this awesome recipe.  Love you, babe.   …
