Couscous With Tomato, Scallion, And Lemon

I’m not super excited that the clocks spring ahead this weekend. We’ll lose one hour of sleep.  My eating and sleeping habits will be off all week as my brain readjusts.  The days won’t even be any longer.  All it does is slide the daylight around a little.  Well, I guess as long as the shift is toward the afternoon then I’ll have more daylight to photograph my food, which means that I don’t have to rush in the early morning to get all the cooking and photographing done.  That’s totally a silver lining.  Plus, I don’t need to get into my pajamas …

Tomatoes, White Beans, and Broccolini Salad

I’m craving Spring and all things that remind me of Spring. I’m not complaining because we’ve had a mild winter, but I sure am anxious for warmer weather and longer days.  I can’t wear shorts yet (nor do I even want to).  Hello, white legs.  But I can start eating foods that fresh and feel spring-y, like this salad.  Isn’t it funny how we tend to crave warm, comforting, fatty foods in the winter, but then do a 180 and crave healthy fresh veggies and fruit once it warms up?  I don’t think I’m alone in this.  Am I?  (I’m hearing …

Falafel-Spiced Roasted Chickpea Salad

I’ve been on a salad kick lately. Maybe I’ve trained my brain to crave salads since I’ve been trying to eat healthier this year.  Hmm, that’s probably wishful thinking on my part.  After all, we’re only 48 days into the year (not that I’m counting).  I’m sure I’ll go back to my normal pizza and bagel cravings in no time.  In the mean time, I’m cashing in on the fact that I would actually prefer to eat vegetables.  (Who am I?) These chickpeas totally make this salad.  I love chickpeas but they are on a whole other level when you roast them with …

Ham and Cheese Pockets

I’m a glutton for punishment. I first made hand pies back in 2014 with a strawberry filling.  They are freaking awesome.  However, they are a pain in the butt to make, at least for a perfectionist like me.  I roll out the pastry dough, measure, then re-roll, then re-measure, again and again, down to the milometer.  It’s not hard to do but it’s undeniably frustrating.  I pretty much swore I’d never make them again. The problem is that you find yourself wanting to make new kinds of pastry with this dough because it’s that amazing.  (If you can really call that …

Black Beans, Sausage And Rice

I had every intention of making a beans and rice meal and then I realized that beans and rice, while tasty as a side dish, may not keep my husband satisfied.  He will, after all, be the one eating it over and over again as the main course. Add another ingredient to the dish, like sausage, and we may have something here.  Seriously, my husband and I have tried a variety of “beans and rice” meals and they are all boring.  Good, but boring.  I had some turkey sausage in the freezer so I threw it in and it totally …
