Broccoli Jalapeno Mac and Cheese

Sometimes I have a hard time getting my daily dose of veggies. My mom says that when I was little I used to eat vegetables all the time.  In fact, I preferred a carrot over chocolate.  Whaaat?! That doesn’t sound like me at all.  I guess I’ve changed.  Luckily I still like to eat most vegetables but I admit that it requires effort and sometimes I slack off.  I wonder if pizza and bagels will ever turn a corner and be considered a vegetable.  😉 If so, I’d be golden. Anyway, in an effort to eat more vegetables, I thought …

Spicy Sausage And Pasta

I’m talking about comfort foods 101 today. We all have an idea of what we consider to be our ideal comfort food so I’m not here to convince you that pasta and sauce is the best comfort food ever (even if is  😉 ).  The reality is that you’re probably like me and you have lots of favorite comfort foods, depending on the time of the year, time of day, or your mood at the moment. I’ve made a variety of Italian sauce recipes.  I love having variety, but my absolute favorite sauce is my Marinara Sauce and Italian Meat Sauce.  They are essentially …

Spaghetti Squash With Chickpeas And Kale

I’ve been craving pizza lately.  So what else is new? Your eyes are not deceiving you.  There is no pizza going on here today.  Womp womp.  I ate so much food over Labor Day weekend so I thought I’d be really healthy this past weekend.  So I woke up Saturday morning and went to my kickboxing class and then I ate healthy all day, including this delicious spaghetti squash meal. Sunday was a different story.  I stayed in my pajamas all day and ate like crap.  I guess you win some and you lose some.   It’s a good thing that …

Sesame Soba Noodles and Vegetables

Hot days call for 15 minutes recipes because I don’t want to be slaving over a hot oven when it’s 90 degrees F out.  I’m pretty sure I’m not alone here. This past week has probably been the hottest that we’ve had all summer long.  Leave it to Mother Nature to wait until the last minute.  Meanwhile, we’re heading into the unofficial last weekend of the summer and I’m itching for Fall time.  That means come Tuesday I’ll be getting all my cozy sweaters ready, drinking pumpkin spice coffee, and lighting all my fall scented candles.  Eager much?  😉 Have you ever cooked soba …

Sweet Potato and Cherry Quinoa

Is it Summer?  Is it Fall?  My brain is so confused. We’ve had some cool nights lately where we didn’t even need to put the air conditioner on.  That’s not typical for CT in August.  Should I put my sandals away and starting wearing my new booties?  Maybe that’s the anxious fashionista talking because it’s going to be over 90 degrees F for most of this week.  I think those booties will have to wait. You can see now why I’m confused.  I sort of feel like I need to wear shorts and booties at the same time.  I’m not sure …
