Chicken Kale Pasta

I woke up this morning thinking that it was Thursday.  What a cruel world it was when I realized that it was only Wednesday. I should probably be enjoying these last few hot days of summer instead of wishing them away.  Maybe it’s a bit too hot for me so I’d rather seek refuge in my air conditioned home.  After all I’m safe there.  It’s a place where I can be on the couch and cuddled under a light blanket.  Wow, that makes me sound like a lazy schmuck.  Don’t judge me.  😉 Anyway, hot days call for light meals …

Jalapeno Popper Corn Fritters

How did it get to be August already? Summer feels like it’s flying by.  There’s so much I need to do before I say “hello, Fall.”  Well, now that I think of it I really need to do three things… make our vacation reservations, eat some s’mores, and eat as much corn on the cob as humanly possible. Mmm, corn on the cob.  I’ve said it before but I’ll say it again…  I just love this stuff.  I’ve enjoyed corn in warm salads, cold salads, and fun dips.  Now it’s time to enjoy corn in fritter style. Greek Tacos

Can someone explain to me how “Taco Tuesday” became a thing?  Yes, folks, this is as serious as it gets for a Monday. I love tacos, but husband really loves them.  It’s pretty much his answer to everything.  What should I make this weekend, babe?  Tacos.  What kind of dessert should we serve when my parents come over?  Tacos.  It’s tacos all the time for my hubby.  Not that there is anything wrong with that. Needless to say we happily eat them on any night of the week, not just on Tuesdays.  For those of you who elitists and only eat tacos on Tuesdays, you can save this recipe for …

Pasta, Zucchini and Garlic

Boy, my husband’s Cinnamon Rolls and Sticky Buns are sure hard to follow. The reality is that not every recipe will be as exciting as those.  I mean, I gave them a 38 hat rating on a 5 hat scale!  That’s the first time I’ve done that in the history of my blog.  Those cinnamon goodies were quite the treat.  My waistline tells me that it’s time to get back to my healthy eating routine and that’s where this summer pasta meal comes in. Sometimes when I’m lazy and crave carbs I whip up some pasta and simply add some Parmesan cheese to it. …

Turbo Pizza

By the time you’re done reading this post you could have been well on your way to homemade pizza.  Less than 30 minutes start to finish, including pizza dough from scratch!  I kid you not… I’m very serious when it comes to pizza.  😉 I asked my husband “How long does it take to make pizza?”  He replied “A few hours, why?”  I answered “Never mind.” but had that sad puppy dog look in my eyes.  Clearly I was asking because I was in the mood for pizza, but was not in the mood to wait.  Conveniently my husband had stumbled into a possible solution …
