Sweet and Sour Chicken

From time to time it comes up that I just don’t want to cook dinner (and even the lazy dinner secret of a bowl of cereal won’t do) my husband and I tend to order Chinese take out food.  It is possible to have it be healthy, and out in the sticks it’s one of the only easy choices.  Sweet and sour chicken is a classic dish on virtually all Chinese take out menus.  Today, I took this classic dish and made a version that doesn’t require any frying, breading, or driving! Soft Frosted Sugar Cookies

100th post!  Holy cow, right!?     😀 I’m on this kick of making huge cookies.  I blame The Perfect Chocolate Chip Cookie that I made recently and of course my husband who has a near religious problem with little cookies.     😉  I’ve made Traditional Sugar Cookies before.  You know, the ones where you roll out the cookie dough and cut out fun shapes.  I love those and while they are “easy” to make, they are quite time consuming and I have to be in the mood for that process.  These still take a while to make thanks to chilling …

Homemade Chipwich

When I was a kid my family and I used vacation in Lake George, NY.  For one week, almost every year, our life was all about miniature golf, pool time, and cheesy shops on the main drag down town.  We especially looked forward to visiting a bakery that sold chipwiches.  They were huge and delicious!  Sadly, the bakery closed a bunch of years back cutting off our supply.  No more chipwiches!  We were so disappointed.  It’s been about 10 years since that happened and we still talk about how we miss those infamous chipwiches. These homemade chipwiches are identical to …

Black Bean Spread

My husband and I love hummus, especially my Easy Hummus recipe.  We love black beans at least as much as we love chick peas.  This got the gears turning…  “I wonder if we can make hummus using black beans?”  Well, we love Mexican food too (which of course regularly features black beans) and decided that would be a great place to start for the seasonings.  By the time we were done, we had created a Mexican inspired black bean based “hummus.”  I must give joint credit to my husband for helping me create this awesome recipe.  Love you, babe.   …

Chocolate Crumb Cake

Oh yea, two of my favorite things combined into one fabulous dish, chocolate and crumb topping!  How can you go wrong…you simply can’t.  🙂 My Perfect Crumb Cake came out so amazing so I wanted to experiment with how I could incorporate chocolate into that traditional crumb cake recipe.  This chocolate crumb cake came out a-maze-ing!  Can you picture me singing that to you?  Hopefully not because I’m not the greatest singer.  Lol.  The chocolate cake layer is dense, moist, and rich and it’s covered with a layer of cinnamon and sugary crumb topping and miniature chocolate chips.  If you’re saying “oh my!” then you’d …
