Chickpeas, Egg and Quinoa Salad

Hi guys!  I’m sorry that I’ve been MIA lately. It’s been crazy busy at work lately and it’s been draining.  For those of you that are new here, I’m a full time attorney.  My blog is a part time hobby that I do on the weekends.  Lately, because of work stress, I found that I was putting blogging to the side in order recharge on the weekends.  I felt guilty leaving you hanging but sometimes we have to skip doing some things to stay sane. On to the recipe of the day.  I’ve been so good about making my lunches …

Pork Egg Roll in a Bowl

This may not be the prettiest meal but it sure is delicious. I’d rather be taking pictures of pretty doughnuts.  Heck, I’d rather be eating them too.   You know, because they’re doughnuts.  I’ve fallen off the wagon and I haven’t been eating healthy for the past month.  I blame my tooth, which started as a tooth ache and resulted in a root canal.  I’ve kept up with my workouts, but my pants feel more snug than usual.  I must get back on the healthy eating track and this meal is a great way to start. Banana Bread Doughnuts with Chocolate Glaze

609 posts and five years later… Tomorrow is my five year blogiversary.  I seriously can’t believe it.  When I started my blog I had no expectations and I had no idea what I was doing (and sometimes I still don’t think I have a clue).  It was and still is a hobby that I’m very passionate about.  I enjoy sharing recipes and other miscellaneous things with you.  Over the years I’ve started to share more non-recipe posts with you for a couple of reasons.  One, it’s getting harder to find recipes that are worth sharing because I have quite the …

Beef and Broccoli Stir Fry

It doesn’t happen often, but I’ve got a beef recipe for all of you today. I like to eat beef but I don’t cook it often (or at all) because I don’t like touching or even looking at raw meat.  Plus, I never know how to determine when the beef is done cooking.  I don’t want to eat it raw and I don’t want to serve shoe leather either.   At the end of the day I simply avoid these struggles and stick to vegetarian meals because there is no guess work there for me.  It’s very hard to overcook things …

Spinach Pie (Spanakopita) for Two

I think this will be my favorite recipe of 2018. I know it’s probably too early in the year to say that I have a favorite recipe, but I really love this spanakopita (aka spinach pie).  Let’s just say that I’ve set a high standard for all recipes that follow this one. Spanakopita is usually made in a big pan to serve a lot of people.  If you’re my Yiayia (Greek grandma), then you make it in a very big pan.  You know, because Greeks like to make enough food to feed an army no matter how many people are …
