No-bake Cheesecake

I have never made a no-bake cheesecake before. Boy, I was missing out. You know what’s great about a cheesecake that doesn’t require actually baking it? Everything. You don’t need to turn on the oven (which is especially a good thing on hot days). You don’t have to wonder if you overcooked it or undercooked it. Glazed Lemon Cookies
