Quinoa Salad

The 4th of July is like Thanksgiving in July, but with different foods.  You know what I mean, right? This coming weekend is BBQ weekend here in America.  Almost everyone will be hosting one or going to one.  There will likely be loads of fattening food choices for you to choose from.  Everything from barbecued meats to baked beans to potato and pasta salads.  You will pig out, you will feel sick, you’ll swear that you’ll never want to eat again, and then before you know it you are going for second and third helping.  Sound familiar to Thanksgiving dinner? …

Spicy Baked Asparagus Fries

After a day like Saturday, my husband and I deserved a trip to IHOP. Okay, I may be being a bit dramatic.  The story goes that my car is 10 years old and I thought I’d make sure that I have the title handy just in case I decide to buy a new car at a moment’s notice.  Guess who couldn’t find the title?  In true Tina style, I freaked out.  Thankfully my husband is a calm cookie and kept me from losing my mind.  Also, fortunately you can get a copy of your car title from the DMV.  However, there’s only one …

Summer Barley Salad

How the heck has half of the year already passed by already?! Since summer is in full swing I was inspired to use veggies that are readily available to me during this time of the year.  I cannot get enough of corn on the cob and tomatoes since this is the best time to eat them.  I think I could eat corn on the cob everyday.  Since salads are synonymous with summer, I thought I’d throw my two favorite summertime veggies into a salad.  The corn adds a little bit of crunch and a lot of flavor here. Barley… have you ever …

Baked Parmesan Zucchini Fries

I’ve made baked french fries.  I’ve made baked zucchini chips.  What do you get when you combine them together?  These amazing baked parmesan zucchini fries. Sure, you could enjoy these zucchini sticks as is or perhaps with some dip of some sort.  Why not dress them up with some panko crumbs?  I’ve used panko to coat chicken, cauliflower, onions, and zucchini (in 2 different ways now) and I’m convinced everything tastes better if it’s covered in panko.  Crunch-tacular! These are called “fries” because they resemble the shape of french fries… and that’s about it. These zucchini fries are a healthier option to the fatty, greasy …

French Fry Salad

I had my youngest sister in mind when I created this salad. One day my sister and I had a conversation about salads.  I have no idea how we even got on the topic.  Anyway, we said that everyone knows that a salad is supposed to be healthy.  Therefore we concluded that you could put whatever you wanted on it and the entire plate of food would still all healthy.  Let’s add ice cream, doughnuts, and cookies!  Yes, in our minds, if it’s on a bed of lettuce, all that junk food instantly becomes healthy.  😉  Unfortunately, we both know that’s not …
