White Beans and Rosemary

When you a host a party do you cook for twenty people when you are actually having six over? Please say yes so that I don’t feel like I’m alone on this one.  😉  The world might end if someone left my house even slightly hungry.  Okay, I might be a liiiitle dramatic.  Making lots of appetizers is one sure way to make sure that my guests leave with a smile and a full tummy. My family loves appetizers so I made plenty of them over the weekend, including these delicious bruschetta.  I recommend popping the whole deal in your mouth because …

Mini Spinach Patties

Lately, it feels like my life is all about cookies and appetizers. Cookies, cookies, cookies.  I’ve been baking them since before Halloween and quite frankly I’m getting a little tired of it (which I say as there is another tray of cookies in the oven).  I feel like I never have enough to hand out to friends and family so I pretty much just keep baking until December 25th (even if my husband is telling me that we have no more room in the freezer). Spinach Pie (Spanakopita) Chicken Quesadillas

Who doesn’t love a quesadilla? You can make a bazillion different kinds of quesadillas and they’re mad easy to make.  I bet you’ve whipped up some before.  What kind was it?  Was it a hit?  No really, I’d love to know because I’m always looking for more interesting recipes to make.  🙂 Like any good Greek girl, I love spinach pie (aka spanakopita).  Last year I was inspired to take the flavors from it and turn it into a low carb dinner.  The result was a delicious Spinach Pie Spaghetti Squash dish.  The spinach filling was so delicious that my husband …

Curried Chickpea Salad

It’s only Wednesday but I’m already dreaming about the upcoming three day holiday weekend.  Let’s give it up for a long weekends… wahoo! What’s everyone got planned this weekend?  I’m taking advantage of the nice weather and getting together with my family for one last summer BBQ.  Here in CT we can sometimes continue the BBQ season throughout September (or January for the more tenacious carnivores out there), but this weekend unofficially marks the end of summer.  Boo.  As much as I’m looking forward to Fall, I know what soon comes after that… cold, snow, more cold, and more snow. …

Cowboy Caviar

Football season is starting soon and I’m excited to have some football food. You know about “football food,” right?  It’s beer, pizza, nachos, dips, chips, and other delicious fattening foods that one typically eats at a game party.  Even if you don’t like sports you’d probably still be willing to go to the party to enjoy the food.  It’s that good.  My contribution to the next game party would be this amazing bean salad. Side bar for a moment…  Can we marvel at my culinary cutting skills for a moment?  It took me FOREVER to cut them all just right.  Okay, maybe not literally forever …
