Coconut Chocolate Chip Bars

I’m celebrating Friday with chocolate and coconut (not that I really need a reason to have chocolate). These bars are little squares of cakey goodness.  But guess what?  There is no wheat flour going on here.  They are made with coconut “flour.”  They get their sweetness from the coconut flakes, chocolate chips and maple syrup instead of piles of sugar.  Crazy, right?  Well to me it sort of is because I’m used to baking with flour, butter, and sugar.  You know, all the fatty delicious food groups. Almond Butter Oatmeal Chocolate Chip Cookie Bars

Do you get obsessed when you find a new ingredient that you love?  Right now I’m into baking with coconut oil and coconut sugar. Chocolate Chip Skillet Cookie

One giant cookie is always a good idea. Folks, you’ve heard it here first… I’m officially tired of making cookies for the season.  If you follow this blog you probably know why that is.  I’ve made about a bazillion of them in the past couple of months (give or take).  So… yeah…  I’m done.  Or am I really done?  I think baking one ginormous cookie is the exception because it’s like making a brownie.  Technicalities.  😉 I highly recommend using a 9 inch size oven safe skillet for this recipe because the directions are specific to that size.  I had previously tried …

Chocolate Pecan Bars

If you bake one thing for the holidays it MUST be these bars. Seriously guys, these bars are freaking amazing.  You should make these for Thanksgiving dessert next week.  You know, because it’s the holiday where  you fill up a huge table full of everything that you could possibly make.  (Holy crap I can’t believe next week is Thanksgiving.) Lemon Bars

Why does a three day weekend seem to go by just as fast as a normal two day weekend?
