Double Chocolate Banana Bread with Peanut Butter Icing

A few weeks ago my youngest sister came over so that I could help her make Almond Biscotti for her boyfriend.  Well, I mostly sat by and supervised.  She did all the work.  (Since that time, she came over again to make those same almond biscotti for her boyfriend’s family.  Yup, they’re that good!)  We talked and laughed so much.  It was a great day in the kitchen.     🙂  I wanted to bake something for her to take home and I’d been looking for an excuse to make this quick bread.  This is the best quick bread that I’ve made so far.  Intrigued? This is a sweet …

Enchilada Pasta Casserole

I realized something the other day.  Every casserole recipe that I am drawn to involves some sort of pasta, some sort of meat, some type sauce or another, and at least one kind of cheese.  Since all these things generally combine into awesome, I’m starting to wonder if there is any other kind of casserole worth eating.     😉 This casserole takes the flavors from a traditional enchilada dish and transforms them into an easy and low fat pasta meal. Enchilada Pasta Casserole Recipe (About 6 to 8 servings) Ingredients: 1 (12 ounce) bag egg noodles (I used No Yolks) 1 pound ground …

Cranberry Date Nut Bars

Do you want a cookie but not the calories that go with it?  That’s what I have here.  Well, it’s not technically a “cookie” per say, but I’m calling it close enough.     😉  These no bake bars taste like a berry fruit roll up snack, except these bars are loaded with healthy ingredients. Cranberry Date Nut Bars Recipe (16 servings) Ingredients: 1 cup almonds 1 cup dried cranberries 1 cup pitted dates 1 tablespoon sweetened coconut flakes 1/2 teaspoon vanilla extract 1/4 cup miniature chocolate chips (optional) Directions: Combine the almonds, dried cranberries, pitted dates, coconut flakes, and …

Roasted Red Pepper Pasta

Happy New Year!  It’s that time of the year when we list our resolutions.  Some people resolve to eat healthier and others might work out more.  Since I can’t really affect how much you work out with my blog, I wanted my first post of the year to be about a healthy recipe.  In particular, I had this roasted red pepper pasta in mind as that first healthy post.  My husband and I have discussed whether this pasta dish is actually “healthy.”  Let’s just say that it’s better for you than a fully loaded lasagna which is frankly horrible for …

Endive with Sweet Potato and Bacon

My husband and I have hosted a lot of holiday parties lately.  I’ve been known to spend hours preparing a particular dessert or entree, but I’m funny when it comes to appetizers.  I’m not a big fan of spending longer on an appetizer than it takes to consume.  These take a bit of prep which flies in the face of that theory, but it was worth it because everyone loved them and they literally disappeared off the serving tray. These endive leaves are like a fancy loaded potato and are sure to impress your guests.  Each endive leaf is filled …
