Tuna Lettuce Wrap

I am craving Spring. I’ve got some Spring décor up in my home. I’m getting my Spring/Summer wardrobe ready too. I’m also craving fresh food, like this tuna lettuce wrap. I added avocado and mini tomatoes to the tuna wrap and topped it with one of my favorite homemade dressings, cilantro vinaigrette. (Now with its own post!) You can really change it up by adding whatever veggies and toppings you want or swapping in your favorite dressing. I’m calling this a “wrap” but I always end up putting too much stuff in it to be able to close it. I …

Cilantro Vinaigrette

This cilantro vinaigrette has been a staple salad dressing for the past couple of years. I’ve shared it with a few recipes but I thought that it deserved a spotlight of its own. It’s also handy for me to refer back to a post with just this on it when I want to make it or include it in some other post. 😉 It was a sunny day so I took advantage of the light. I’ve been enjoying playing with the light and shadows in my photos lately. I hope you like the personality of the recent pics. Cilantro Vinaigrette …

Roasted Carrots and Couscous Salad

Hello, cold February. All I want to do is eat pizza, bagels, and ice cream. I wish that I could say that’s a winter thing, but if led to my own devices I would enjoy those foods 24/7, 365 days a year. Salads are my jam. Mmm, jam sandwich cookies. Sorry, I miss my holiday cookie diet. 😉 Anyway, I digress. I enjoy salads for lunch all year long, but I thought you may be looking for ideas with it being the new year. The salads below are great anytime of the year but especially when fresh vegetables are hard to come by or are expensive because it’s winter and they are out of season. Some of these salads are healthy and some not as much. Some of them don’t look like like a typical salad (in other words they don’t have …

Zucchini and Pea Orzo Salad

Is anyone else in a seasonal confused state of mind like me? I’m craving all things Fall but I’m still enjoying summer foods. I’m watching Fall and Christmas movies on the Hallmark Channel. I’m seeing Halloween candy and decorations in the stores. Starbucks is already talking about the date PSLs will go on sale. I’ve got Fall inspiration photos on my social media feeds. Naturally, this means that I’m influenced so I’m starting to think about how I’ll decorate the house for Fall and what kinds of pumpkin and apple goodies to make. Fall is my favorite season so I …
