I love when I can take one basic recipe and turn it into a bunch of different dishes. These potatoes are as basic as it gets. I like to make a big batch of these skillet potatoes so that we can have leftovers. Yes folks, I’m intentionally trying to get leftovers. This was my favorite side dish at our Thanksgiving for two dinner. Green beans can be boring by themselves, but when you jazz them up with bacon and onions, it’s the side dish that everyone will ask for. Let’s face it, anything with bacon is kind of amazing. You don’t have to slave away peeling potatoes all morning when you’re making mashed potatoes for two people. Bonus. I haven’t made mashed potatoes in years.
