Kale and Pasta

Have you ever hated a particular food but then come to like it over time?  That sums up my relationship with kale. When I first tried kale I thought it was bitter and quite frankly gross.  My husband was somewhat ambivalent about it.  He didn’t dislike it, but he wouldn’t seek it out either.  Now we’re totally on the kale bandwagon.  I don’t know how that happened but I’m not about to question it.  We like a healthy green veggie and we’re going with it. I’m a huge fan of Ree Drummond, otherwise known as The Pioneer Woman.  I love watching her TV show on Saturday mornings on …

Stuff I’m Into

Here’s the Stuff I’m Into lately: Blogs.  I love, love, love Helene’s Plate to Pixel book.  I’ve probably read it three or four times and each time I pick up something new.  It’s the perfect book for a food blogger, especially to read on vacation because I think it helps me look at food in a different way, a fresh new way so to speak.  Helene’s blog, Tartelette, is amazing beyond belief and I could stare at her photos for hours.  She can make zested and juiced limes look gorgeous!  Talent times infinity. Lindsey Stirling. My husband introduced me to this talented musician.  A few …

Zucchini and Ricotta Bruschetta

Let’s get this week started… only because I have no choice.  If I had my way, it would still be Sunday, or better yet Saturday, or maybe Friday after work, or whenever you get the most possible time before you have to go back to work again. I started my Sunday with a hot cup of coffee on the couch and watched a recording of The Pioneer Woman.  She is awesome and I love so many of her recipes.  One might be coming later this week (hint, hint).  Then I watched part of an episode of The Golden Girls.  Is it …

Pineapple Coconut Smoothie

Yogurt, fruit, and granola… This is what my breakfasts are all about lately. I tend to get sick of eating the same thing over and over again, but when I find something I really love, like pizza, ice cream, cookies, bagels, or a great yogurt combo, then I can eat it every day for long periods of time.  It’s probably not surprising that my “love” list involves mostly unhealthy foods. The pre-packaged yogurt cups with fruit are the bomb digity when you’re feeling lazy and they can easily be thrown into your lunch bag for work.  If I’m feeling ambitious, I’ll …

Baileys Iced Coffee

Are you more excited that Zoolander 2 is coming out next year or that St. Patrick’s Day is tomorrow?  This might sound like a weird comparison but they are in fact two events that I am excited about right now. Last week felt like the longest week ever.  Then in the midst of it my husband showed me the announcement that Derek and Hansel were coming back to the big screen and it totally made my week!  Yes, this means that I love Zoolander.  Should I be embarrassed that I like this movie?  I mean, it’s not exactly an award winning …
