Zucchini Chicken Enchiladas

What vegetables are in season in August? To name a few, tomatoes, melon, corn, and my favorite… zucchini. Peach Quinoa Salad

It’s weird to me that I’m sharing two recipes in a row that feature fruit in salads (watermelon caprese salad and today’s peach quinoa salad) because I don’t tend to care for having fruit in my salads. Watermelon Caprese Salad

This is summer in a bowl. I love caprese. If you’re not familiar with it, it’s a mozzarella, tomato and basil salad. The combo is a classic and is so delicious. However, I’m giving it a little twist today and adding watermelon to the mix. Yup, watermelon, which is another favorite of mine to enjoy in the summer. The sweetness from the watermelon is a wonderful contrast to the savory mozzarella cheese and tomatoes. I have to say that it’s important it be fresh mozzarella for the right texture.
