Mexican food. Enchiladas. Easy casserole. My husband and I are big fans of Mexican food so I tend to cook it often. Even if I only have rice, beans, and a jar of salsa handy, I can always whip up something quick that vaguely imitates Mexican food. It’s not fancy by any means, but it works for those days when we have a craving but I’m feeling lazy in the kitchen. You know what’s great about this enchilada casserole? (Besides everything.) You don’t have to make the enchilada sauce and you don’t have to roll tortillas. Don’t get me wrong, there is a …

French Chic
Every room needs an inspiration piece, that one item in a room that inspires you to decorate around it. For our guest bedroom, it was this French tapestry. This amazing tapestry was a recent gift to me. It was bought in an antique shop in France. I wonder who owned it before me? A king and queen perhaps? 😉 I used neutral color colors for the bedding so that the focus is all on that beautiful tapestry. Plus, I just love decorating in neutrals, anyway. Just look at that embroidery detail. Gorgeous work. Yes, that’s a zebra print pillow. It’s …
Peanut Butter Crunch Bars
Are you obsessed with peanut butter? How about Butterfinger candy bars? If yes, then I think I may have made your Friday. 🙂 My goal here was to create a dessert with loads of peanut butter power. There’s some chocolate going on here and some subtle graham flavor, but let’s be real, it’s mostly a peanut butter flavored party. I had the idea to add Butterfinger bars to a no-bake peanut butter layer. I figured it would be a winner because let’s face it, peanut butter + peanut butter flavored candy bar = awesome. Also who doesn’t love the “crispety, crunchety” texture of Butterfingers? …
Homemade Turtles
A random act of kindness goes a long way. My grandma has been on my mind lately so I wanted to do something nice for her, for no reason aside from the fact that I love her. I decided to whip something for her. She loves anything with chocolate and nuts, so making these turtle candies for her seemed like a no brainer. I mean who doesn’t like to receive a box of chocolates? Especially when they are your favorite kind. 😉 These candies are super duper easy to make… with a few simple techniques that I’ve learned along the way that I’m …
Stuffed Zucchini
I’m so excited to share this zucchini dish with you that I can hardly stand it! Fair warning, you do need a quite a few pots and a bit of time for this recipe (this is definitely not a one pot wonder), but it is SO worth it. Start with scooping out your zucchini. I used a grapefruit spoon because the serrated edges made scooping really easy, but really any spoon will work. (Note that I placed the zucchini in the baking dish just for show. You’ll see from the rest of the photos that I had to remove them.) Place …
