Quinoa and Black Beans

About three years ago I made quinoa.  I cooked it in water and didn’t add any spices. It was incredibly bland and tasted…well, “gross” was the only word that came to mind.  In other words, I said to myself “I’m never making this again.”  For that reason, I’m really not selling quinoa to you, but stay with me here.  I kept hearing that quinoa is so healthy and I know a bunch of people that really like it, so I thought I’d give it another try with this recipe.  It may have taken me a few years to get here …

Chicken Chili Soup

It was cool this past weekend here in CT and I was not mentally prepared for it.  I feel like the cooler temperature came out of no where, maybe because we had a really hot and humid summer.  It seemed like it was time to drag out my over sized sweatshirt, which used to belong to my husband.  When I first met him about 7 years ago, he used to wear this orange sweatshirt  quite often.  Once we got to a certain level in our relationship, I “suggested” that he retire that sweatshirt because it had seen better days.  He …

Chocolate Tort

My husband is great at reading me, sometimes scarily so because he might know something about me before I even know it.  When my husband and I eat out for dinner and order dessert, he knows that I will pick a chocolate dessert, not like that takes much of his skills to know.  I always gravitate to my precious chocolate desserts so if you know me even a little then you know sorbet will be my last choice.  Let’s face it, if I’m spending calories on dessert I’m going to go for something I know I’ll love. This chocolate tort …

Sweet and Sour Chicken

From time to time it comes up that I just don’t want to cook dinner (and even the lazy dinner secret of a bowl of cereal won’t do) my husband and I tend to order Chinese take out food.  It is possible to have it be healthy, and out in the sticks it’s one of the only easy choices.  Sweet and sour chicken is a classic dish on virtually all Chinese take out menus.  Today, I took this classic dish and made a version that doesn’t require any frying, breading, or driving! Sweet and Sour Chicken Recipe (About 4 servings) …
