For a girl who doesn’t fancy making homemade dressing, I sure am making a lot of homemade dressing lately. There is really nothing fancy about this salad, but the blue cheese dressing makes it. If you’re not a fan of blue cheese then you can substitute it for gorgonzola cheese. Someone might have bought that one by accident. 😉 I think a wedge of lettuce on a plate looks so fancy, just like something you’d get at a nice restaurant. The only downside (literally) to it is that all the toppings fall off the sides. Eh, I’m over it because …

Grandma’s Chicken
Time for a bit of nostalga. This is one of those dishes that can feed a family on the cheap and doesn’t take much time to prepare. It’s perfect for a busy family on a budget. The recipe came from the grandmother of a friend of the family and was served in my husband’s house while he was growing up. As a fair warning, you have to like canned peas which can be described as an acquired taste for some. If you’d like to to make this into a slightly fancier version you could use frozen veggies or even fresh …
Chicken Chipotle Bowls
Soooo if you thought you’ve seen this post recently then you’d be right. We had a major issue with our server and all I can say is “thank goodness for backups and my husband.” It took a lot of work but my husband got my blog back up and running with some minor hiccups, which included losing my two most recent blog posts. Hey, in the grand scheme of things, I’ll take it. I don’t remember what I wrote when I posted this recipe a couple of weeks ago and to be honest I don’t want to try to recreate …
Corn and Arugula Salad
I’m kind of sorry for sharing so many salad recipes. I know it’s one note-y but my blog reflects my life and salads are my life at the moment. This salad makes for a great appetizer or side dish, but it’s a typical lunch for me lately. I might add some leftover chicken or chick peas to give a protein kick. I’m enjoying all of the fresh veggies that summer has to offer. Doesn’t this look like summer on a plate?! Before you know it, we’ll be talking about holiday cookies 24/7 around here. Until then, what’s your favorite salad …
Chicken Shawarma Bowls
I am very into chicken with salads right now. Who am I? Hey, I like chicken, I’m just very picky about it. I think that’s actually to your advantage because that means I’m only sharing the best of the best chicken recipes with you. (I’m sure that my husband is giving me a funny face as he’s editing this. Only I could find a positive spin for being a finicky chicken eater.) Since it’s summer, I’m taking advantage of all of the fresh produce before it goes down hill in the colder months (which is typical for New England). I …
