Crispy Feta With Chickpeas, Zucchini, and Orzo

I love zucchini season. There is so much you can do with zucchini. You can go sweet with zucchini bread or savory with zucchini ravioli. Lately I slice one up and pan fry the slices in a tiny bit of olive oil with salt and pepper. It’s simple, delicious and goes with just about any dinner I make. If you’ve followed me for a while then you know that I love chickpeas. I have a lot of recipes to prove it. 😉 I also love feta cheese. I’m half Greek so it’s kind of a requirement. Zucchini, chickpeas, feta cheese… …

Frozen Margaritas

I’ve got the perfect cocktail to celebrate the beginning of summer. I am a wine or gin and tonic kind of girl. Margaritas? To be honest, it’s not really my drink of choice. Perhaps it’s because I’ve had some not so good versions. But I have three tips to make sure I (and you) have the best margarita (frozen or on the rocks) ever. My husband made it for me and he just seems to be better at bartending than me, so maybe that’s a sort of fourth tip? One, use good liquor. This doesn’t mean $200 magical tequila harvested …

Skillet Pork Chops

These pork chops are simple and delicious. I think the key to good pork chops is two fold. One, get the thick cut. I don’t feel that it matters if it has a bone or not. The thicker cut pieces are more juicy and tender, compared to the thin cut. Second, don’t overcook them. We use a Habor thermometer, identical to this one linked here. It takes all the guess work out of cooking it correctly, and it means you only have to poke the pork chop with a thermometer instead of slicing into it with a knife to confirm that …

Spicy Roasted Carrots

I rarely post vegetable side dish recipes, but this one is worth sharing. We usually make the same one or two vegetables for dinner. Steamed broccoli is where its at. Seriously, we eat it like two or three times a week. Every now and then I will try a new cooked veggie but then we usually go back to our all standby broccoli or cauliflower. Maybe it’s just me and I’m hard to please when it comes to side dishes. But these carrots caught my eye in a recipe book the other day and they are awesome. First of all, …

Skillet Tortellini with Meat Sauce

Guys, I’ve got an easy and delicious one pan meal for you today. Yup, you cook everything in one skillet. You know that means? Less pots and pans to wash after dinner. These are the little things that I live for. I have to admit that I was skeptical about cooking the tortellini right in the meat sauce. You can even ask my husband because I kept bothering him from the kitchen. I kept watching the tortellini cook and and telling him that the recipe wasn’t working. But it did work! It’s pasta, cheese, and beef magic. Turns out that …
