Sweet and Spicy Cauliflower

If you’re looking for an idea appetizer idea that can also be for dinner then I’ve got the answer for you today. Those little nuggets look like they are chicken but they are not. Say hello to these cauliflower nuggets. They are coated with bread crumbs, panko crumbs, and flour and then baked in the oven. A few years ago I made a similar recipe and called them cauliflower poppers. Those poppers are only covered in panko crumbs. The more panko crumbs you use, the more crunchy they will be. Both recipes are great and I would recommend either of …

Cheat Sheet Roasted Vegetable Couscous

I love a recipe that only requires one pan. Yes, you cook everything in one pan! You know what that means, right? You have less dishes to wash and I’m all for that. Most importantly, I’m really into this vegetable couscous because I get to say couscous. It’s one of my favorite words to say because it’s fun. Just me? Warm Chocolate Fudge Cakes

I’m celebrating my 6 year blog-iversary today! Six years?! I can’t believe it. This calls for a celebration with an extra fabulous recipe today. Last year I realized that I share a chocolate recipe for every anniversary so I’m continuing with the tradition. How would you like a warm chocolate fudge cake? I’ve got an easy dinner recipe for you that you can make in 30 minutes. Are you interested? Not only am I hungry by the time I get home from work and the gym, but I’m also tired, so dinners must be easy and quick. I feel like I’ve been in a dinner rut lately, making the same things over and over again. Worse, I’ve resorted to bagels and cereal a lot more than I care to admit. I needed to find a new and exciting dinner. A few years ago I shared a recipe for stuffed zucchini, which is …

Spinach and Feta Turkey Meatballs

I haven’t made meatballs in ages. My husband was surprised to find me in the kitchen cooking meatballs last weekend.  It’s not my thing because I’m picky and not usually impressed with the final outcome.  (Also, I hate mixing meat with my hands.  Blech.)  However, I love feta cheese and spinach so when I saw this meatball recipe I thought this might be a winner and I was right.  I asked my husband if he liked them and he said “I could eat 12 of these right now.” Yup, these are a winner. These meatballs have a lot of great flavor …
