Bean Salad

Happy Wednesday! I wracked my brain trying to figure out what side dish to bring to a family BBQ.  I wasn’t sure what everyone (or most people) would like.  Thankfully there is no shortage of options when my family gets together.  There’s enough food to feed an army, so even if no one wants what I made, it’s not the end of the world.  Is that a Greek thing to make absolutely sure there is way, way too much food available? I’ve shared some menu ideas in the past but they’re usually around the holidays and geared for winter time foods.  Today, I thought I’d share an example of what I’d serve this time of the year.  All of the recipes can be prepared ahead of time and for me that’s key.  I like to spend time chatting and drinking with my guests instead of frantically running around the kitchen. Spring Dinner Menu: I always like to make a salad and for me, I prefer a light side salad, like this Olive Salad.  Although my husband is not a fan of …

Chicken Lo Mein

Are you looking for an easy week night dinner?  If you are, and it’s not cereal, then I might have an idea for you.  🙂 It seems like I’m always looking for new dinner recipes.  Maybe it’s because I get bored easily, unless it’s pizza, because pizza is always a good idea. I was excited when I found this recipe because it looked easy and delicious.  Plus, I was excited when I realized that I had all of the ingredients with exception of the chicken.  I’m not exactly a fan of chicken, but there are exceptions, like this chicken lo …
