I’ve been on a kick for finding healthy lunch recipes that I can make ahead of time to bring to work and today’s recipe is a new addition to the rotation. I love sweet potatoes. My husband is not as much of fan as me so if you’re like him, then feel free to use a regular baked potato instead. It’ll still be super tasty, I promise. I’m not into eating meat lately, so this is a wonderful vegetarian option. It also happens to be “healthy.” I use quotations because everyone has their own definition of what’s healthy. I consider …

Sugar Cookie Bars
I love sugar cookies but I really dislike rolling them out. I’m too much of a perfectionist and I get very frustrated rolling out each cookie to be the same exact thickness. I have this same complaint about gingerbread cookies too. My solution is simply avoid cookies that involve this step. These sugar cookie bars are a perfectionist’s dream because there is essentially no perfection required. I don’t have to fuss at all while making them. In fact, not only are they easy (and stress free) to make, but you can whip them up quickly with minimal dishes to wash. …
Football Food Recipes
Welcome back football! If you’re new to my blog then you may not know that I’m a fan of the game. Yup, I like girly fashion stuff and football. 😉 With the season starting up this week, I thought that I would share some of my favorite food to eat on game days. I’ve even included some never before seen photos. 🙂 Snack food is a must, and I love this Cowboy Caviar. …

How does one save time getting ready in the morning? Monday through Friday I feel like I’m rushing in the morning to get everything done on time and out the door for the office. I’ve been driving to the same office for years, but the traffic has gotten worse. A couple of months ago I decided to reevaluate my morning routine and revise it to get things done early enough to make it to work on time. The answer is to plan ahead, prepare, prepare, and prepare some more. The first thing I decided to do was to pick out my outfit …
Tomato and Cucumber Ricotta Toast
Did you see the solar eclipse last week? My husband and I traveled to Nebraska with my father-in-law and his wife to be right near the centerline of the path of the eclipse’s totality (the part where the sun appears to be completely covered by the moon). We picked a spot near some corn fields (check it out in satellite view mode to see how much corn we were in the middle of), set up our camera and telescope, and busted out our fancy cardboard solar glasses. As the eclipse started there weren’t really a lot of obvious differences in, well, …
