Mexican Style Stuffed Sweet Potato

I’ve been on a kick for finding healthy lunch recipes that I can make ahead of time to bring to work and today’s recipe is a new addition to the rotation. I love sweet potatoes.  My husband is not as much of fan as me so if you’re like him, then feel free to use a regular baked potato instead.  It’ll still be super tasty, I promise. Sugar Cookie Bars

I love sugar cookies but I really dislike rolling them out. I’m too much of a perfectionist and I get very frustrated rolling out each cookie to be the same exact thickness.  I have this same complaint about gingerbread cookies too.  My solution is simply avoid cookies that involve this step. Tomato and Cucumber Ricotta Toast

Did you see the solar eclipse last week? My husband and I traveled to Nebraska with my father-in-law and his wife to be right near the centerline of the path of the eclipse’s totality (the part where the sun appears to be completely covered by the moon).  We picked a spot near some corn fields (check it out in satellite view mode to see how much corn we were in the middle of), set up our camera and telescope, and busted out our fancy cardboard solar glasses.
