Low Calorie Mini Chocolate Chip Muffins

Are muffins for breakfast or dessert?  This has been an ongoing debate with my husband. I think muffins are intended to be for breakfast (but can really be eaten at any time of the day) and my husband says they are more of a dessert.  Muffins are like cupcakes without frosting so I see where he is coming from.  However if coffee shops entice you to buy them with your morning coffee then I stand by my theory. I made these chocolate chip muffins the other day and they have fewer calories than your average chocolate chip muffin.  I’m always …

Memorial Day Recipes

What are your plans for the long holiday weekend?  I’m going to get some much needed rest and relaxation.  Since it’s the unofficial start to summer, aka BBQ food season, I thought I’d share some of my favorite recipes (with some never before seen photos) that are perfect for summer and especially this weekend. Eggplant Caprese.  So simple but SO good. Strawberry Daiquiri.  Gorgeousness, right? Comfy walking …

Lemon Scones

Scones are always a good idea. I have never made lemon scones before so I thought that I should do something about that.  I started by using my trusty base scone recipe, which I shared with you guys last year.  It’s become my go-to scone recipe because it’s delicious and easy to alter for almost any flavor that you want. Spring Salad

I don’t like naming a recipe after a season because no one but you knows what that really means.  However any other title that I came up with was just too dang long and I don’t like that even more. This is a Caprese salad with lettuce, chickpeas, and pasta with a balsamic vinaigrette dressing.  See what I mean?  It’s a mouthful.  Now that tomatoes and basil are in season around here I’ve deemed this a Spring salad.  You can call it what you like, but at the end of the day it’s a bowl full of deliciousness and that’s …
