Pesto Quinoa with Roasted Vegetables and Chickpeas
Quinoa is like sprinkles. My husband wholeheartedly disagrees with that statement on the basis of quinoa being gross, and sprinkles not being gross. I don’t mean how they taste though. This meal really should be called “Chicken Caesar Salad on Top of a Warm Naan Bread” but that’s not what my cafeteria at work calls it. The other day I heard someone order a salad pizza at work.
