Hosting A Brunch

I love hosting a brunch because you can serve breakfast, lunch, or a combination of both.  I prefer serving both plus a little something sweet.  (No menu is complete without dessert of course!)  With Easter and Mother’s Day (aka brunch holidays, maybe it’s a Spring thing?) right around the corner I thought that I’d share some of my favorite recipes that I’ve served at bunches of brunches that I’ve hosted in the past. A dip (with chips and/or crackers):  Corn Guacamole An egg dish:  Breakfast Tart or Bacon, Egg and Cheese Skillet Strata A savory dish:  Butternut Squash, Kale and Sausage or One Pot …

Brown Rice With Sweet Potatoes and Avocado

I love avocados… Brown rice is pretty boring.  Maybe that goes for rice in general, but I think that the brown persuasion is especially bland.  So I decided to add some of my favorite ingredients to it, and boom, now I’ve got something exciting and delicious.  Well, my husband says it’s not that exciting.  To each is own.  😉 I think that I could throw avocados in just about anything and it would make whatever I’m eating 100 times better.  Although I have not tried avocados in desserts yet.  (Sorry Tom.)  Something about that just seems wrong to me.  I shouldn’t …

3 Ingredient Banana Smoothie

It’s time to kick it up a notch. Spring has sprung officially, but thankfully it’s not warm enough in CT to wear shorts yet.  Am I the only one who gets anxiety wearing shorts for the first time of the season?  Anyone?  Just me?  Maybe you can’t go by me since I don’t like wearing shorts.  Anyway, the reality is I need to kick those winter pounds so I’ve stepped up my workout game.  I’m sore (a lot) and I’m excited that I’m trying something new.  Workout.  Check.  Food… well, that’s a work in progress.  I love food so it’s …

Maple Mustard Roasted Chicken

We have no plans this weekend and I’m loving that.  We could do anything… or nothing.  Aren’t those weekends the best sometimes? The one thing that I do have on my agenda for the weekend is to hit the gym.  Since I don’t have to rush anywhere afterwards maybe I’ll hit a coffee shop afterwards for a treat.  The thing is that the parking lot is a monstrosity because it’s small, it’s always crowded, and it’s right off a very busy street that makes it almost dangerous when people try to get in or out of it.  I’ve probably said to myself that “I’ll …

Crispy Baked Potato Wedges

Sometimes you need a basic dish that will go with just about anything. The other day my sister asked me how to bake sliced potatoes.  It’s surprisingly easy and simple.  I have made them before so I pointed her in the direction of the roasted potato recipe and the Greek roasted potato recipe to give her a couple of options to choose from.  Those recipes are oldies but goodies and it made me wonder if there was maybe a better way to make roasted potatoes.  That’s where these crispy baked potato wedges come in. I can think of a million ways …
