Zucchini Pizza Bites

This is what you get when you cross zucchini and pizza. Now some people (like my husband) may not see these cuties as little pizzas because it’s missing the most delicious part, carbs. Listen, I love bread. Always have and always will. But it’s zucchini season so why not try something a little different. No, this won’t taste quite like pizza, but it comes pretty close. And they are so delicious. They didn’t last 5 minutes in our house. They’re also mad easy to make. It takes longer to preheat the oven than it does to actually make them. Ten …

Tomato Salad

This is my ideal summer salad. I live in New England and if I want delicious tomatoes I usually have to wait until it’s tomato season, which is now. Sure you can buy tomatoes in November but they may not look or taste as good as the ones on this plate. My husband loves to make tomato sandwiches or tomato and cucumber salad and I love to make tomato salads like this one. I love all the vibrant colors from the variety of tomatoes. Red, purple, yellow. None of those flavorless spongy pink ones here. This salad is all about …

Goat Cheese, Bacon, and Apple Salad

I’ve got a fun and fancy salad for you today. This salad has been one of my absolute favorites lately. I love the combination of the tangy goat cheese, the salty and crispy bacon, and the sweet apple. Seriously, it’s so good. Lately, I haven’t liked the store bought bottle dressings and I’m too lazy to make homemade salad dressings This semi-homemade Italian dressing has been the ideal solution. I take a Goods Seasons Italian herb packet and combine it with oil, vinegar, and water. Pretty nifty. This has been my go-to salad dressing for the past three months for …

Nachos

Tomorrow is May 1st. Mind blown. Cinco de Mayo is right around the corner and I initially thought that nachos would be a great way to celebrate the occasion, and they are, but then I realized that nachos are awesome any day of the year. I wasn’t sure that I wanted to blog a recipe for nachos because I don’t think that there is a right or wrong way to do it. Grab some chips and pile on the ingredients that you love. Make a pile for one person or 50. My husband and I made these nachos on New …

Crustless Zucchini Pie

For the record, my husband says that this is not a pie because it doesn’t have a crust.  Pies must have a crust. This is sort of like a quiche.  However, quiches are mostly made of eggs and this “pie” only has two eggs in it.  I’ve made a variety of quiches and this one is lighter than any others. Call this whatever you like.  I’ve been calling it “the zucchini thing.” It’s a technical term.  Hey, whatever works, right?  My husband knows what I’m talking about and he doesn’t get to complain about me calling it a pie. I’ve …
