Small Chocolate Cake

My blog is 13 years old today! Every blog-iversary I make something chocolate-y (except for one year when I goofed up, but it was still worthy of the celebration). Coffee chocolate chip cookie bars, chocolate chip doughnuts, single serving whole wheat chocolate chip cookie, chocolate cupcakes for two, banana bread doughnuts with chocolate glaze, warm chocolate fudge cakes, chocolate chip black and white cookies, chocolate lava cakes, mini cheesecake, chocolate cake, mini ganache topped cheesecake, then cookies and cream pie.  I’m back with another chocolate goodie because it’s kind of the unofficial rule now to mark the occasion. What you see here is 100% real, no AI, no filters, just …

Little Apple Crumble Cheesecake

What do you make if you are craving apple pie and cheesecake? Combine them both together of course. The crust is a traditional graham crack crust which is so delicious. Duh, it’s graham cracker crust. In fact, when I pulled it out of the oven my husband said that I could stop there because he’d happily eat the crust by itself. Banana Cake with Cream Cheese Frosting

What do you do when you have ripe bananas that need to be used up? Make cake, of course. Lately I’ve been on a banana smoothie kick for breakfast (wow, I need to update those pictures). This cake is exactly what you’d think it is, like banana bread only not bread shaped. Cover it with delicious cream cheese frosting and… Okay, see? Basically the same, only not. Once you …

Lemon Cake

This is summer in a cake. I think of fruits and light desserts for the summer and this cake is both at once. The texture of this cake is light and airy and it’s got a wonderful lemon flavor. The secret to that lemony goodness is to use fresh lemons. I would never, (and I repeat) NEVER, use lemon extract because I think it gives desserts a distinctly bathroom cleaner flavor and smell, which is not good eats. Please tell me that I’m not the only one who thinks that. There’s no frosting here, which makes this cake not as …

Small Streusel Coffee Cake

This is the most delicious coffee cake I’ve baked in years… or maybe ever?! This streusel coffee cake is exactly what you might imagine. It has a moist vanilla cake with a cinnamon sugar streusel in the middle. It’s topped with a wonderful layer of crumbs and a sprinkling of powdered sugar. There are a variety of streusel coffee cake recipes out there but this one takes the cake. Meaning, all the ingredients are at the perfect ratios and it’s simply amazing. The sun peaked out for a moment to show off this beauty. 🙂 This streusel coffee cake is …
