Flourless Chocolate And Peanut Butter Fudgy Brownies

It’s Friday AND a long weekend for the Memorial Day holiday so we should celebrate with, what else, food.  How about some brownies?  They are a crowd pleaser and easy to make.  Oh yes, they will do just fine.  I’ve got a couple of kick butt recipes already, but these are different from what I’ve done.  These brownies are gluten-free! These brownies are loaded with chocolate fudgy goodness and have a hint of peanut butter flavor. Magic Cookie Bars

My mom has the magic touch.  No, she’s not a magician, but sometimes I wonder.     😉  Whenever I worry about something (which is a daily ritual for me) she always knows what to say to put my mind at ease.  She gives me great advice no matter what the topic is.  I could go on and on.  I love and admire her so much that words don’t seem to do her justice.  What better way to honor her (and all moms) with these magic cookie bars. These gooey cookie bars are loaded with chocolate, coconut, and nuts. Magic …

Since then a million bazillion brownie recipes have been invented.  (Yes, I counted.     😉 )  They can be fudgy or …

These flourless peanut butter cookies are filled with a layer …

Flourless Peanut Butter Cookies

The rules for following a gluten-free diet are easy to understand, right?  Simply don’t eat anything with gluten (i.e. wheat, barley, and rye).  As it turns out, what seems like simple rules are actually a total pain in the butt.  Almost everything seems to have one or more of those ingredients in it.  Better still, sometimes they are hidden in things like “natural ingredients” and you just get blind-sided by them.  If you are choosing to avoid gluten because you want to, then usually that’s okay, but if you have celiac disease that can result in a very uncomfortable couple of …
