This is a Dave’s Bread Corner recipe in disguise. I know, you’re thinking cookies aren’t bread at all but my husband loves cookies and aside from bread they are one of his go to baked goods to make. A common pattern when he’s in the kitchen baking is that he prefers no-fuss recipes. My entire family gets together every year for a long weekend in Lake George, NY. It’s basically a food fiesta with some swimming and mini golf. I can’t wait! How did I use those homemade Chocolate Wafers that I made last week? Drum roll please… I initially wanted to make a straightforward ice cream sandwich. You know, the rectangle shaped ones where the chocolate cookie part unfortunately sticks to your fingers. Um, yeah, the simple beginning somehow snowballed into this amazing concoction. Hey, I’m not complaining. I’m super happy with the end result, even if I strayed a little bit from my original intent. A few months ago I thought I’d pick up some chocolate wafers from the grocery store. I wasn’t sure if I was going to use them or not but I figured it wouldn’t hurt to have them in the house for when I needed them. Holy cow, they are expensive! Forget it. I put them back on the shelf. It’s Friday AND a long weekend for the Memorial Day holiday so we should celebrate with, what else, food. How about some brownies? They are a crowd pleaser and easy to make.
