Banana Chocolate Chip Cookies

I like to watch the food network channel.  Sometimes I can find good recipes and at the very least I almost always get inspiration for creating new ones.  One day we were flipping channels and ended up on Kelsey’s Essentials.  The recipe of the day just happened to be banana cookies with a combo of ingredients I’d never seen before.  That caught my attention for a little while, but I wasn’t feeling inspired to make them.  My husband said, “We need to make those.”  You got it, dude!  He was my inspiration for whipping up these cookies.     🙂 These cookies are the perfect combination …

Double Mint Cookie Bars

As St. Patty’s Day approaches, I’m seeing more green colored food online (i.e. pinterest.com and all the various social media outlets).  I simply can’t go there.  Not for the lack of spirit, but because it looks unappealing to me.  Don’t get me wrong, I don’t mind a little green color in my food, but I’ve never been one to want green eggs and ham.  I do, however, love mint and mint is notoriously green colored (even if not naturally so). Light Chocolate Chip Cookies

Another chocolate chip cookie recipe?  Yes, I’ve gone there (and I’m sure this won’t be the last time).   Would you believe that this is a healthier version though? A few weeks ago, I challenged myself to learn more about healthy baking and to try healthier dessert recipes (a personal goal for improvement, so to speak).  That might mean one new recipe or 100, only time will tell.  I still must remain true to myself and let’s face it…  I’ll be where the chocolate is.     😉  I began racking my brain to try to come up with a new …

Peanut Butter Chocolate Dipped Blondies

I bought a bag of Valentine’s Day colored M&Ms the other day.  How should I have fun with them?  (Aside from eating them by the handful.)  Well, chocolate is best friends with peanut butter so let’s have a party with the two flavors! I made these super thick and chewy peanut butter blondies and coated them with chocolate and M&Ms. Peanut Butter Chocolate Dipped Blondies Recipe (Makes 16 bars) Ingredients: 2/3 cup butter (roughly 1 stick and 3 tablespoons) 1 cup dark brown sugar 1/2 cup white sugar 3/4 cup creamy peanut butter 2 eggs 1 teaspoon vanilla extract 1 and 3/4 cups all-purpose …
