Zucchini Ravioli

I never thought that I’d really enjoy an Italian meal that’s missing pasta.  This zucchini ravioli is amazing. The zucchini  is the “ravioli” part of this recipe.  You use a vegetable peeler to slice thin wide strips (think of lasagna noodles).  Then you fill the zucchini slices with a ricotta cheese mixture and it ends up looking like a ravioli.  Nifty, right?  I’m a girl who loves pasta, and I thought I’d miss it, but I don’t.  Maybe it’s because you still get a whole lot of cheese and let’s face it, cheese makes everything better. Black Bean Sweet Potato Enchiladas

I need to make enchiladas more often because they sure are delicious. Making enchiladas is kind of a task because it usually requires a lot of ingredients, steps and time. Crustless Zucchini Pie

For the record, my husband says that this is not a pie because it doesn’t have a crust.  Pies must have a crust. This is sort of like a quiche.  However, quiches are mostly made of eggs and this “pie” only has two eggs in it.  I’ve made a variety of quiches and this one is lighter than any others. Greek Roasted Chicken

Winner, winner, chicken dinner. (Sorry, I had to go there.) My Greek roasted chicken and potatoes dish is one of the recipes from my blog that I make the most.
