Broccoli and Chickpea Sandwiches

This is not your usual sandwich. Think of a salad with a Greek flair piled into a pita or Naan bread and you fold it up and carefully try to eat it without wearing it. Good luck (and sorry). This “sandwich” filling is SO good and it’s really the highlight of the recipe. The combination of chickpeas, broccoli, feta cheese, and olives in a lemon dressing is really out of this world delicious. In fact, I had some leftovers (but no Naan) so I decided to throw tortellini into the mix and it was equally tasty. Look at that, two …

Vegetarian Taco Bowl

When was the last time that you cooked orzo? Do you have as much trouble straining it as I do? They like to wedge themselves into the holes of my colander. There is nothing really exciting about a bowl of beans, veggies, salsa, and other fun ingredients that you’d enjoy in a taco. (I skipped the taco meat today and went vegetarian.) I’ve made similar meals tons of times but with rice or a tortilla. How about switching it up and using orzo as the carb? It may sound weird to add pasta to a Mexican dish, but it actually …

Creamy Vegan Pasta

I’m stepping out of my comfort zone and trying a new combination of ingredients today. Yes, that is real Parmesan cheese on it in the pictures, and yes, that would make it non-vegan. If you don’t want the cheese on top, simply don’t use it. 🙂 I saw this recipe on Instagram the other day and it got me curious. Can a sauce really be creamy if there is no dairy in it? I’m not vegan so I’ve always used milk, cream, butter, or whatever diary is appropriate to the recipe, when I want something to be creamy. A cashew …

Broccoli Cheddar Soup

It’s March and it’s still cold here in Connecticut, in fact it is weirdly colder than it was last month, so soup is on the agenda. This soup is not going to win any health awards, but it sure is delicious. There is a lot of creaminess going on here. It’s the ideal comfort food to warm your core and make your belly happy. Even though this is mostly a cheese soup, let’s not forget to give a shout out to the broccoli. Aren’t broccoli and cheddar cheese a good pairing? This soup was certainly a calorie splurge, but on …

Sweet and Spicy Cauliflower

If you’re looking for an idea appetizer idea that can also be for dinner then I’ve got the answer for you today. Those little nuggets look like they are chicken but they are not. Say hello to these cauliflower nuggets. They are coated with bread crumbs, panko crumbs, and flour and then baked in the oven. A few years ago I made a similar recipe and called them cauliflower poppers. Those poppers are only covered in panko crumbs. The more panko crumbs you use, the more crunchy they will be. Both recipes are great and I would recommend either of …
