Cheat Sheet Roasted Vegetable Couscous

I love a recipe that only requires one pan. Yes, you cook everything in one pan! You know what that means, right? You have less dishes to wash and I’m all for that. Most importantly, I’m really into this vegetable couscous because I get to say couscous. It’s one of my favorite words to say because it’s fun. Just me? Anyway, in all seriousness, this is what I consider to be the ideal lunch. It’s vegetarian (which I tend to lean towards) and it’s loaded with protein because of the fun chickpeas. Plus, it’s great that it reheats well. I …

Beef and Zucchini

I’ve got an easy dinner recipe for you that you can make in 30 minutes. Are you interested? Not only am I hungry by the time I get home from work and the gym, but I’m also tired, so dinners must be easy and quick. I feel like I’ve been in a dinner rut lately, making the same things over and over again. Worse, I’ve resorted to bagels and cereal a lot more than I care to admit. I needed to find a new and exciting dinner. A few years ago I shared a recipe for stuffed zucchini, which is …

Spinach and Feta Turkey Meatballs

I haven’t made meatballs in ages. My husband was surprised to find me in the kitchen cooking meatballs last weekend.  It’s not my thing because I’m picky and not usually impressed with the final outcome.  (Also, I hate mixing meat with my hands.  Blech.)  However, I love feta cheese and spinach so when I saw this meatball recipe I thought this might be a winner and I was right.  I asked my husband if he liked them and he said “I could eat 12 of these right now.” Yup, these are a winner. These meatballs have a lot of great flavor …

Baked Teriyaki Chicken

Guys, this chicken is ridiculously delicious. If you know me or are familiar with my blog then you know that I’m not the biggest fan of chicken.  I won’t bore you with the details again, but just know where I’m coming from when I say that I’m blown away by this teriyaki chicken, especially because me and chicken don’t get along very well. This chicken is exactly what it sounds like.  You’re baking chicken in a homemade teriyaki sauce.  The sauce is amazing.  It’s a traditional sweet and salty Asian sauce with garlic and ginger.  I definitely recommend using fresh ginger …

Beef Tacos

I’m throwing a taco party. Seriously, doesn’t a taco party sound like so much fun?!  You can set up a buffet with a whole bunch of taco ingredients and let everyone make their own tacos.  We had a taco party for 2 at home this past weekend and the only thing missing was the loud music. Usually we use a pre-made taco seasoning mix to flavor our taco meat (depending on the day, we use beef, ground turkey, or ground chicken).  However, lately I haven’t liked it.  Maybe my taste buds are changing or maybe the bottle is old.  Whatever the reason, I was …
