Mulligan Stew

It’s a hot and humid summer day but I’m still going to share a stew recipe with you today. I’m not rushing us into Fall with today being the first day of August.  That would be annoying since we still have half of the summer to go.  However, I have jumped straight to winter momentarily because I’ve been watching the Christmas movies in July on the Hallmark Channel.  The movies have definitely put me in the mood for hot cocoa but that’s probably going a little too far for the middle of summer, even for me. Anyway, my husband watched …

Sheet Pan Chicken Fajitas

I have a love hate relationship with chicken. I’ve told you guys before that I’m picky about the texture and taste of chicken.  If I get a gristly bit or it tastes too chicken-y then I’m grossed out and chicken goes on to my “foods I hate” list.  If the chicken can behave itself then everything is right in the world.  Lately, I’ve had no weird chicken aversions so I’m loving chicken.  (Boy, it’s not often that I say that).  That means that I’m taking advantage of this happy with chicken situation and making a lot of recipes, like these …

Margherita Tortilla Pizza

I’m sharing a Margherita tortilla pizza recipe with you today.  Yup, I said tortilla. Pizza.  Where do I start?  It’s one of my favorite foods of all time and I’m sure that I’ve said that a number of times.  My husband makes a killer homemade pizza.  Unfortunately, we don’t always have the time (or patience) to go the real deal route.  That means that I’m always looking for ways to make a “pizza wannabe.” I’ve made Naan pizza (which we eat all the time) and English muffin pizza (which honestly gives me flashbacks to college).  Then I found the recipe for …

Chickpea Quinoa Caprese Salad

Meet my favorite lunch. A few weeks ago I was craving a traditional caprese salad, which is mozzarella cheese, tomatoes and basil.  This fabulous trio screams summertime to me.  I wanted to kick it up a notch and add something hearty and protein-y, so I added quinoa and chickpeas.  Chickpeas are the answer to everything for me.  😉  And quinoa…  I’ve been adding that to almost every lunch lately.  I’m sure that my husband is cringing as he reads this because he’s not a fan of quinoa.  Not at all.  He can even detect the smell of it cooking from the …

Chicken Lo Mein

Are you looking for an easy week night dinner?  If you are, and it’s not cereal, then I might have an idea for you.  🙂 It seems like I’m always looking for new dinner recipes.  Maybe it’s because I get bored easily, unless it’s pizza, because pizza is always a good idea. I was excited when I found this recipe because it looked easy and delicious.  Plus, I was excited when I realized that I had all of the ingredients with exception of the chicken.  I’m not exactly a fan of chicken, but there are exceptions, like this chicken lo …
