7 Lunch Meal Prep Recipes

I keep two things in mind when I prepare my lunches on Sunday.  Is it easy and fast to make?  Will it taste as good on day 4 as it did on day 1?  That means that I might take short cuts to save time and use ingredients that will stand the test of time in the fridge. Today I’m sharing my recent lunches that I’ve made ahead of time on Sundays.  As a heads up, these recipes are not gourmet or exciting and they may even seem boring.  However, they work great for me and I hope that they will …

Roasted Chicken, Potatoes and Salad

Happy Friday! I’m excited to share today’s recipe with you because it’s not often that I find a chicken recipe that is worthy of blogging about.  I’m super picky about the texture and taste of chicken.  If I get a gristly bit or it tastes too chicken-y then I don’t want it.  I basically turn into a 5 year old and say that I never want chicken again.  In reality it’s just a few days or weeks before I give chicken another chance, but I’m always worried about what will skeeze me out next with chicken. This may not be the prettiest meal but it sure is delicious. I’d rather be taking pictures of pretty doughnuts.  Heck, I’d rather be eating them too.   You know, because they’re doughnuts.  I’ve fallen off the wagon and I haven’t been eating healthy for the past month.  I blame my tooth, which started as a tooth ache and resulted in a root canal.  I’ve kept up with my workouts, but my pants feel more snug than usual.  I must get back on the healthy eating track and this meal is a great way to start. This meal is quick and …

Beef and Broccoli Stir Fry

It doesn’t happen often, but I’ve got a beef recipe for all of you today. I like to eat beef but I don’t cook it often (or at all) because I don’t like touching or even looking at raw meat.  Plus, I never know how to determine when the beef is done cooking.  I don’t want to eat it raw and I don’t want to serve shoe leather either.   At the end of the day I simply avoid these struggles and stick to vegetarian meals because there is no guess work there for me.  It’s very hard to overcook things …
