Spring Salad

I don’t like naming a recipe after a season because no one but you knows what that really means.  However any other title that I came up with was just too dang long and I don’t like that even more. This is a Caprese salad with lettuce, chickpeas, and pasta with a balsamic vinaigrette dressing.  See what I mean?  It’s a mouthful.  Now that tomatoes and basil are in season around here I’ve deemed this a Spring salad.  You can call it what you like, but at the end of the day it’s a bowl full of deliciousness and that’s …

Pesto Quinoa with Roasted Vegetables and Chickpeas

Quinoa is like sprinkles.  My husband wholeheartedly disagrees with that statement on the basis of quinoa being gross, and sprinkles not being gross.  I don’t mean how they taste though. I know that sprinkles and quinoa are two very different ingredients and that they are not normally found in one recipe.  (Thank goodness!)  However, every time I cook with either one I end up spilling them all over the kitchen counters and floor.  No matter how much I clean I still find some days later.  Am I the only one that experiences this? Anyway, I’ve been on a quinoa kick lately and this …

Salad Pizza

This meal really should be called “Chicken Caesar Salad on Top of a Warm Naan Bread” but that’s not what my cafeteria at work calls it. The other day I heard someone order a salad pizza at work.  For those of you that are new here, (welcome!) food blogging is not my full time job although some days I wish it was.  I’m in-house counsel (attorney) for a corporation.  Anyway, I thought that I was going to see a traditional pizza with sauce, cheese, and some sort of salad concoction on top.  I was surprised to find that I was completely …

Maple Mustard Roasted Chicken

We have no plans this weekend and I’m loving that.  We could do anything… or nothing.  Aren’t those weekends the best sometimes? The one thing that I do have on my agenda for the weekend is to hit the gym.  Since I don’t have to rush anywhere afterwards maybe I’ll hit a coffee shop afterwards for a treat.  The thing is that the parking lot is a monstrosity because it’s small, it’s always crowded, and it’s right off a very busy street that makes it almost dangerous when people try to get in or out of it.  I’ve probably said to myself that “I’ll …

Crispy Baked Chicken Fingers Salad

My chicken strike might be over. I haven’t cooked chicken in months (as you may or may have not noticed).  I like chicken but I’m really picky about the texture and taste.  If I get a gristly bit (you know, a little cartilage or fat) or it tastes too chicken-y, then I’m done and won’t want to eat chicken for an extended period of time. Yes, I said “too chicken-y.”  I blame my dad for getting that idea into my head.  He used to say that all the time when I was a kid (and still does) and now as an adult I …
