What do you cook when it’s hot and super humid out and you’re lazy? I eat a bowl of cereal or whip up a quick salad. I’m pretty sure a blog post about how to make a bowl of cereal wouldn’t go over very well, so I figure a salad recipe is a better thing to share with you. By the way, in case you’re curious, I’m into Grape-Nuts cereal lately (still not going to tell you how to put milk in the bowl though). 😉 The other day my husband and I had a conversation about Greek salads. When we went to …

Skillet Calzone
Pizzas are for Fridays and the weekend! Instead, how about we switch it up a bit and have a calzone? You know, because that’s nothing like a pizza. 😉 Whaaaat?! Calzone in a skillet? That was my reaction when I saw this recipe in a magazine. Of course I needed to try it as soon as possible. It’s basically like my Pizza Skillet, except you add a layer of pizza dough on top of the whole shebang and fill it to the brim with stuff first. I’m still intimidated… or more like I’m still afraid of working with yeast so …
Chilaquiles
Chilaquiles. Chila… what? I try to pronounce the term correctly but I feel like I’m not saying it right. I took Spanish language lessons in high school but perhaps I’m forgetting the basics. After all, high school was… let’s just say many years ago. Then I asked my husband who proudly declares that he “took four years of Spanish and got the approximate pronunciation of ‘hola’ out of it.” He wasn’t much help either. Then I turned to the trusty interwebs and found an audio version to help assist me. It turns out that I was pretty close to saying it right… tchee/lah/KEE/lehs. I bet that you …
Easy Tofu Stir Fry
Tofu. Are you a fan? I think it’s one of those foods that you either love or hate. When I told my mom that I was making tofu for dinner, her exact words were “bleh.” Well, to each her own. 😉 I won’t convince my mom or you to try it, but I will say that I initially didn’t like tofu. I thought it was too soft and mushy. My husband on the other hand has always liked tofu. He broke me down a little at a time with tasty dishes that had tofu in them. Then I learned how to cook it in …
One Pot Mexican Stroganoff
Hectic days call for quick dinners and this one is speedy and tasty all at once. So what’s the deal-e-o with this casserole type meal? Well, it’s part Mexican and part stroganoff, sort of. It’s got a Mexican flair from the lovely enchilada sauce. It’s not by any means a traditional stroganoff, but it has elements of it here, like the pasta, meat, mushrooms, and creamy sauce. My husband says it’s nothing like a stroganoff… like at all, but he admits that he’s comparing it to the real deal. It’s hard to explain so you’ll really have to try it to see …
